Imitation Meatloaf

This was pretty good. I think next time, I will use less thyme. It came out tasting a little like Thanksgiving stuffing. I made a few modifications this time: I didn't have wheat germ so I used nutritional yeast instead and I substituted ground red pepper for hot sauce since I was out of sauce. Overall, this was good. Very filling. Made great leftovers. I will definitely make this one again.

Quinoa and Black Beans

I rarely comment or review recipes but this one was so delicious I had to put my two cents in. I made this recipe as listed except I only put 1/8 tsp of cayenne pepper in as my family doesn't like things too hot. My 11 year old daughter and I made it together for lunch and thought it was fabulous (and she doesn't even like black beans)! This one is definitely a keeper! UPDATE: Leftovers taste great stuff into a pita with some tomato!

Michelle's Coconut Chicken Curry

This was a very good recipe. I was out of cauliflower so I substituted sweet potatoes. Also, I cut the curry amount in half (fearing that it seemed like too much) but I think it would have been fine to use the whole amount. Served it over brown rice. Yum!

Middle Eastern Rice with Black Beans and Chickpeas

This recipe was great! Even my kids loved it! I realized after I'd already started that I was out of turmeric so I just left that out. I also substituted ground beef since that's what I had on hand. It was still delicious. This recipe makes a lot of food (leftovers!). I stuffed some into a wheat pita the next day for lunch and it was fabulous! Thanks for a great recipe! Will definitely make this one again.

Homemade Black Bean Veggie Burgers

I made these burgers for a Christmas party so my sister would have a vegetarian option. She loved them and, shocker of all shockers, so did my husband and daughter (they don't even LIKE black beans!). I followed other users' suggestions about doubling the eggs in the recipe and had no issues with the burgers falling apart. I also used half the amount of chili powder and tobasco sauce. When I did a 'test burger' right after mixing things up, I wasn't sure if it would be hot enough but after the uncooked patties sat overnight in the fridge they had plenty of heat and I was glad I didn't add in the rest of the spice. Fried them up on a non-stick griddle and they were fabulous! Thanks for a great recipe!
