Fast Feta Spread
This recipe is delicious. I use reduced fat cream cheese instead of fat-free (I've never found fat-free cheese appealing) and I add a little splash of milk to my food processor because the ingredients are too thick and because I prefer to use the recipe as a creamier dip rather than a spread. I served the feta dip with the Pita Bread Bites from this site. It's one of my favorite appetizers. Yum.

Stuffed Mushrooms III
I made these for a bridal shower and they were a big hit. I do think the stuffing could use a bit more flavor. I did not have any pesto, so perhaps that was a contributing factor. The recipe makes enough cheese stuffing for several pans of regular-sized white mushrooms. Also, I think I had to cook them longer than the recipe calls for in order to get the cheese "bubbly and brown". At the end of the day, though, they're tasty (and meat-less!) and I love them!

Garlic Pita Bread Bites
I modify this recipe when I make these. They need to be cooked longer and I usually need more butter to completely cover all the pita bread. With those changes, though, they're a huge hit. I like to serve them with a feta spread.
