Slow Cooker Mongolian Beef

Reviewed: Oct. 1, 2009
this was AWESOME!! word to the wise, its quite sweet, so if you dont like sweet, cut back on the sugar. we loved it!! flank steak was too expensive, so i substituted flap meat and it was so tender.served it over white rice. i also added chili garlic sauce to kick up the heat, maybe 2-3 Tbsp. loved the flavor combo spicy/sweet. thanks for a ridiculously easy and delicious recipe!!!

Zucchini Bread IV

i did the half oil and half applesauce, added an extra cup of zuchinni and grated an apple into the mix. for the toppping i cruched up cinnamon toast crunch cereal and sprinkled it heavily on the top. it was awesome!! it was like a light streusel topping without the butter.

Spicy Lime Grilled Shrimp

Reviewed: Aug. 9, 2009
i thought they were pretty good (4 stars) but considering the reaction of my guests, i decided to go with 5 stars. they were gone in minutes, family said it was the best shrimp recipe ever. its so easy too! when i did it a second time, i used some chili powder as well and liked it better.

Irish Cream Creme Brulee

Reviewed: Aug. 9, 2009
i was looking for a good base creme brulee recipe and decided to use this one minus the irish creme. i didn't know what irish creme tastes like, so i didn't want to but a big bottle just for a little bit. turns out, its amazing even without it! made a whole variety of them, added fresh blueberries, semisweet chocolate chips, fresh rasberries, and fresh peaches. they were awesome!!

Chipotle Mayo

really liked this recipe. added some extras : 1 clove of garlic, about 1 Tbsp of chopped chives, and about 1/3 cup cilantro and pulsed it in the processor. the results were fantastic!! and i hate Mayonnaise, so it must be good for me to eat it!!

Spicy Chipotle Turkey Burgers

Reviewed: Aug. 9, 2009
Absolutely Fabulous!! actually deserves more stars! i am not a huge fan or turkey burgers, but my husband is. So i decided to try and find a recipe for turkey burgers that i could enjoy as well. the flavors that come out of this burger are so insane! i followed the reciped with the exception of the onion, didn't have any so i used chives from our garden. topped it with a home-made chipotle mayo and it was great. it would be a great burger choice for a BBQ. if all turkey burgers could taste this good...i'd never go back to beef :)

Fry Bread Tacos II

Reviewed: Jan. 25, 2009
tasted great...but i think i did something wrong along the way, because mine puffed up pretty thick. i decided to cut them open and use it like a taco shell and found some of them to be doughy in the center. it must be my mistake, because no one else seemed to have this problem. but being the improvisor that i am, i pulled out the stick centers and served them anyways! the outsides were perfect and my husband said he didn't really even notice that i had to alter anything. i really liked the texture. i had 3 left over so i cut them into strips and sprinkled the suggested cinammon sugar mix and that was a HUGE hit with my 4-year-old. (she's quite picky) in fact, i caught her sneaking the container of them into her room. really great recipe, so versatile. what else can you make for dinner and turn around and make a dessert out of it?? nothing i know of. next time i'll roll them out thinner and fry them longer. all in all, excellent!

i taught a class on healthy smoothies and had the kids make 3 separate recipes and pick their fave. this is the one they picked. we used lite OJ just to cut down the sugar. i tried it again at home using some frozen mango and added a little non fat plain yogurt and it was awesome!!

Bread and Celery Stuffing

Reviewed: Dec. 25, 2008
excellent recipe, very simple. we brine our turkey so i decided to this out of the bird. due to lack of oven space i ended up putting it in a crock pot. i made it the night before and it looked like it dried out, so when it started to warm in the crock pot, i added more chicken broth and some drippings from my turkey. it was a total hit. i saw guests with seconds of just stuffing! go figure!
