Boiled Chicken
Very nice basic recipe. I used a package of chicken thighs and served it with rice as a bland dinner for a family member getting over a stomach illness. I only made two changes: (1) adding about a teaspoon of minced garlic from a jar, and (2) I followed the other reviewers' advice to let it cool in the broth, and the texture was great - very very tender. Yes, it is quite tasteless, but when you can only eat crackers and toast and Jell-o, it's a great change! You can get it slightly tastier by adding salt and pepper beforehand and fresh lemon juice just before serving.

Chicken Meatballs and Spaghetti
Wow!! Who knew I could make meatballs?? I used pre-seasoned panko instead of bread crumbs and skipped the parmesan cheese, and they turned out great. The only tricky part was browning the meatballs because I couldn't figure out how to brown them "on all sides". I ended up squashing them a little bit in order to keep turning them and ended up with little 3-D hexagons. That part was tricky but they really ended up delicious. Used sauce from a jar and whole-wheat spaghetti. What a great recipe, perfect even for someone who has no clue what they're doing.

Fast and Delicious Black Bean Soup
This was a big hit among my vegetarian, vegan, and meat-eating roommates! Loved it. I skipped the ham and the green pepper. It reheated very well. I served it with cheddar biscuits.
