Extreme Chocolate Cake

The cake part of this recipe was to die for! So moist and chocolately! Next time I will cut the frosting part in half--it made way too much for the cake and I ended up throwing alot of it away.

Coconut Cake I

I made this cake with a coconut flavored cake mix. I only used slightly over one cup of sugar in the sour cream, and used less than half of the flaked coconut. The sugar gelled up well overnight-no graininess at all! The filling seemed really runny, but once poured over the cut layers, it soaked into the cake really well. The best part of this cake is the cool whip/sugar/sour cream frosting! It compares to getting the whipped frostings at bakeries! I could eat it with a spoon! I think the fact that I used a coconut cake mix, in addition to the coconut flakes made it a bit of overkill. Next time I will stick to the recipe and use white cake. This cake was definitely a hit with my guests, and super moist! I will definitely be making again...And will be making the frosting (minus the coconut) to use on a red velvet cake. This finding a permanent place in my recipe box!

Pineapple Glaze for Ham

I've made this glaze a few times and it never thickens up (since I use a 20oz. can of pineapple), so I had to improvise. Instead I poked holes in the ham, put the cherries and pineapples on with toohtpicks then place the ham in a turkey size oven bag (poke holes in the top) and put it in a glass pan. I cook it for an hour, open the bag, then baste the ham every 15 mins or so. This is the BEST ham I ever had! The bag keeps it super moist and there is plenty of glaze/sauce left over for after slicing. HIGHLY RECOMMENDED!

Apple Pie by Grandma Ople

This is THE BEST APPLE PIE EVER! (Please don't tell my mother)! I made a few changes as I am not that handy when it comes to crust. I used a store bought crust, and just poured the mixture over the apples instead of over the crust, then covered with the top crust. It makes the apples super moist and so delicious!

Meatloaf With A Bite

This was really good! I doubled the recipe and got two loafs, but they were moistste. They didn't stay in a slice form when cut--more like meatloaf mash, but still tasted excellent. Next time I am going to try smaller loafs or possibly cooking on a cookie sheet where the grease can drain a bit better. Otherwise, this tasted great!

The Best Oatmeal Cookies

I'm not a bog fan of oatmeal cookies, but I made these for my boyfriend for Valentinme's Day. He loved them! They are just chewy enough..crispy bottom but soft everywhere else. I even liked them! I used quick oats--not sure if it had something to do with it, but my dough was kind of flaky..I just made balls out of the mix and pressed them down. Perfect after baking!

Homemade Mac and Cheese
