Dirty Diapers

These are perfect for a baby shower. I made them for the one I hosted a few years ago. Everyone thought they were hilarious and delicious! I also made some "Wet Diapers" (just cheese without any meat). Huge hit all around.

That Addicting Salad

YUM! I made this for a family get together and LOVED it. My husband was hesitant about me making it when he saw the cauliflower... but chopped super fine, even HE thought it tasted good! Definitely make the dressing the day before. While you're at it, cook and crumble the bacon and chop the cauliflower so all you need to do is toss all the ingredients the next day! You won't be dissappointed!

This is a great recipe for the most part, but I gotta say it was rather bland and in need of salt. Next time I think I'll add garlic powder, salt and pepper to the mixture before mixing with the spaghetti.

Meatloaf with Fried Onions and Ranch Seasoning

I make this at least once a month if not more. My husband LOVES it and hints that its time to make it again when he sets out the key ingredients on the counter (usually just the french-fried onions does the trick):) What's great about it is how EASY it is! Just mix it all together and through it in the oven! I add more ketchup to the top and remove the foil for the last 10 minutes or so. Other than that, I follow the recipe and it's a hit every time. Even my picky kids love it!

Carrot Cupcakes with White Chocolate Cream Cheese Icing

This was my first attempt at baking something "from scratch." They turned out GREAT! The cake was moist and delicious, and the frosting was a PERFECT compliment. I did end up with extra frosting... but somehow my husband didn't let it go to waste :) After struggling to shred 1 cup worth of carrots, I used the food processor for the second cup. Much easier and worked perfectly! Next time I will puree the crushed pineapple as well. Or at least remove the big chunks. Getting the occasional pineapple bite was a little odd. Still, overall this is a 5 star recipe!!

Bite-Size Crab Quiches

These were very good but I have to suggest that instead of following the recipe exactly - try this instead: 1. Don't mix dill with egg mixture - it will just float on top and annoy you. Mix egg, milk and SEASONED salt only. 2. After forming dough in mini-cupcake tray, add about a teaspoon of egg mixture FIRST. If you add it last as the recipe suggests, it will likely spill all over the tray (unless perhaps you use a turkey baster - which I didn't have available). 3. Add a tiny pinch of dill to each cup, then a pinch of the crab and a pinch of swiss (equal amounts - enough to fill the cup just to the top). Don't overfill as they will puff up considerably when cooking. Everyone loved these - it's kinda hard to go wrong since the buttermilk bisquit alone is good. Adding egg, crab and swiss?? Bonus!! Thanks for the recipe - I will definitely make again :)

Brown Sugar Smokies

I did as another reviewer suggested and dredged the bacon in brown sugar then rolled it around the little smokie. Definitely use center cut bacon - much better all around and will stick to itself so you don't need to cook w/ toothpicks in them. I put toothpicks in them after cooking in broiler pan at 400 degrees for about 15 minutes on each side. They were a HUGE hit!!

Wrapped Salmon

I almost gave up on this recipe before tasting it because working with phyllo dough is frustrating! Just one bite changed my mind completely. Took advice from others and mixed mustard (1/2 brown, 1/2 yellow) with a little soy sauce, dried dill, and a splash of white wine. Would definitely recommend preparing this dish ahead of time (to minimize phyllo-frustration) and serve it for a dinner party! BTW, if the phyllo sheet breaks just paste sheets together with butter. Worked perfectly for me!

Quick and Easy Chicken

I didn't use all the sugar it called for and it was still pretty sweet - at first I was worried it was too sweet but it actually turned out quite good! My husband was a fan. I doubled the sauce (more than enough) and it was pretty watery - so I added some corn starch which thickened it nicely.

Great Green Salad

I made this salad as a main course by adding chicken. I realized a little too late that I was out of white wine vinegar, so I just used white wine instead (hehe) and added a little extra salt to make up for it. After cooking the chicken, I tossed it and the feta cheese in with the dressing and let it sit in the fridge for a few hours. When we were ready to eat, I added the lettuce, avocado and almonds and tossed until well coated. The dressing acted as a marinade for the chicken - making it taste sooo good! Highly recommend!

Easy Broccoli Quiche

I brought this to an easter brunch and received loads of compliments on it! I suggest chopping the broccoli really well so that spreads throughout the quiche, rather than having big chunks. I pressed the cheese into the crust (as suggested in other reviews) and then sprinkled another layer over the broccoli before pouring the egg mix over it. Then I sprinkled onion powder on the top. My oven is old, so I needed to cover it with foil halfway through to avoid burning the crust, but all in all, this recipe is super easy and REALLY good!!

Fantastic Potatoes

I almost shouldn't rate this recipe because I changed so many things, but it served as my inspiration! I didn't use american cheese, olives or green peppers. Instead I used cheddar & mozzarella and green onion. I also added some onion and garlic powder, black pepper and a teaspoon of minced garlic. Served it with the corned beef and cabbage on St. Patricks day. So YUMMY!

Baked Pork Chops I

Hands down, our favorite way to have pork chops now! I made a few changes to the recipe though. I didn't bother with the flour as it didn't seem necessary. I skipped the part where it says to bake for an hour before adding the sauce - instead I covered them with the sauce and topped the dish with more of the breadcrumbs before putting in the oven. Baked for 15 minutes then broiled for 5. Top was golden and the chops were cooked perfectly!! Definitely recommend keeping the wine in the recipe - it's what makes the flavor!!

Blue Cheese Crusted Filet Mignon with Port Wine Sauce

WOW. This is an easy recipe with a gourmet result! I made it last night and my husband and still can't shut up about it. It's not very time consuming and a great way to have filets when it's too cold outside to grill. I ABSOLUTELY LOVED IT!

Honey Baked Chicken II

I LOVE this recipe! It's so easy and delicous. I added some cayenne pepper and more curry powder than the recipe calls for. I also used half dijon mustard and half regular mustard. Served with rice and peas - I'll definitely make it again and again!

Layered Enchilada Bake

This is so easy to make! I followed the recipe for the most part but used ground turkey and Reeses original salsa instead. I also saved most of the sour cream it calls for to add later and topped it with shredded lettuce and sliced avocado. YUM!
