Honey Key Lime Grilled Chicken

This was really good - I marinated it overnight and also add a couple of dashes of McCormic Montreal Steak Seasoning and some freshly chopped basil. I increases the garlic as well.

Fantastic! and a really quick and impressive looking with very little effort involved! I used chicken soup broth instead of beef broth and brandy.

Graham Cracker Crust II

Quick and easy to make if you don't have a store bought crust or if you are making the rust in a larger pan. I picked this recipe over the others - as the extra sugar is not necessary for the crust that will have a sweet topping on top... I used the crust for a frozen mousse cake and also for frozen mousse cupcakes. Worked out well for both of them.

Apple-Raspberry Crisp

This was good - but with the changes I made. I doubled the recipe. The recipe only calls for the brown sugar to be added to the fruit and none to the crisp. I just added the tbsp. of flour to the crisp and the brown sugar - which I reduced a bit to the crisp topping. I also followed a review and kept the margarine (i used smart balance - non-heydrogenated margarine)and did not melt it - in order to ensure a crisp - crisp! (I cut down on the margarine a bit as well - incorperated it until slightly damp and crumbly.

Kalacs (Hungarian Cinnamon Swirl Bread)

These were FANTASTIC!!!! The dough was so easy to work with and had a very nice texture to it. I did substitute oil for the butter in the bread recipe. I have used both water one time and soy milk instead of the milk in a number of different instances. Both came out great. I brushed light non-hydrogenated margerine instead of butter onto the dough, sprinkled it with a generous amount of brown sugar and cinnamon, rolled it up tightly and cut it into 1 1/2 inch slices and placed them into well sprayed muffin tins to rise for 35 minutes. I brushed the tops with an egg wash and baked it for about 12-15 minutes - DELICIOUS!!!!!

Yellow Squash Casserole

Very Good! I made this with a package of saltines - as I did not have the crackers. I used green zucchini instead of yellow. I left out the butter - It didn't need the extra fat. I added some Italian seasoning and McCormick Montreal Steak Seasoning to it. Very good!

Stovetop Granola

Very good! I liked this a lot - I added 2 cups of coconut flakes to the oats and used smart balance - non-hydrogenated margarine in place of the butter for the syrup. I found the granola stayed soft and chewy and did not crunch up - so I put it in a huge roasting pan lined with parchment paper and put it into a 300 degree oven for about 20 minutes. I let it sit on the counter for about 1/2 hour and then it crunched up. Next time - I will follow the ingredients listed, but I will make the syrup on the stove top - or even in the microwave and toast the oats in the oven. - This will save the extra fat and calories from the oil used in the beginning. Used to top "lemon Blueberry Dessert" from this website!

Lime Garlic Chicken

I used olive oil instead of butter and much less. I used a little bit to saute the chicken. Next time I will save the calories and just bake it or saute it quickly and then add some chicken stock to continue cooking the chicken instead of adding more oil. Nice flavor and very soft.

Good. Super quick and super easy... left out the parmesan cheese. Added some sliced olives and different colored peppers. Only used 1/2 bottle of prepared Season's Italian dressing.

Taco Salad II

I used ground chicken instead of lean beef to make this delicious chicken taco salad. I also used "Taco seasoning I" from this website for the seasoning. I left out the cheese. While the chicken was cooking, I preheated my oven to 350, scrunched up some tine foil into a ball, placed it into a tin pan and sprayed it with PAM. I placed a whole wheat wrap on top and let its sides ripple over each other. I baked it for about 7 minutes and placed the salad and chicken into it and poured the dressing on top - Very satisfying and delicious!
