Strawberry Cream Cheese Clouds

This had a bunch of steps but it came out fabulous. I did not have the puff pastry shells - so I used Dunkin Hines white cake mix to make cupcakes (I prefer it to the yellow cake mix). I did not add the sugar to the strawberries as they were already sweet! I used toffuti cream cheese to keep it non-dairy and added a couple of drops of red food coloring to the cream cheese mixture to make it pink. I followed the instructions of piping the filling and adding the strawberries, and served it right away! It really was a big hit!

Deep Dark Chocolate Cake

This is my "go-to" chocolate cake! It is great and so easy to make! It is very chocolaty and extremely versatile - as I have made it in bundt pans, circle pans, 9x13 and even as cupcakes. The frosting is really good too - sometimes I use oil instead of butter as I am concerned whether the cake would need refrigeration after frosting.

Chicken with Garlic, Basil, and Parsley

Amazing! We loved this recipe - I made some changes. I used only freshly chopped herbs and minced the garlic. I added a little olive oil and some fresh lemon juice. I combined all the ingredients, and let the chicken cutlets marinate in it for a few hours. I left out the tomatoes - as we don't like baked tomatoes ans instead, placed a thinly sliced piece of lemon on each piece of chicken. This was wonderful and I will try it on the grill in the summer as well!

Bryan's Spicy Red Lentil Soup

Very good! I purred cooked the lentils before adding everything else in, then purred most of the lentils and then added the rest of the vegetables - so they wouldn't get "lost" in the soup.

Strawberry Spinach Salad I

This was amazing! We loved this salad! I added a diced mango as well. I loved the subtle crunch the sesame seeds gave to the salad as well! I made some modifications - I doubled the amount of spinach and used about 1/4 cup of olive oil instead of 1/2 a cup. I omitted the chopped onions and added 2 crushed cloves of garlic to the dressing and made the dressing about 2 hours before I served it and it thicken up nicely. I did not use all of the dressing - otherwise it would have been swimming in dressing.I also added chopped red onions. I will come back to this recipe over and over again!

Lemon String Beans

Pizza Pinwheels

I made it like I make cinnamon buns. I let it rise in the pan and then baked it. Next time I will separate the pizza pinwheels even more so they don't touch. The kids loved it.

No Fuss Fruit Pie

You couldn't get easier than this! This recipe is so simple, quick to prepare and is always a success! I have also used blueberry pie filling. I sprinkled the top with cinnamon and sugar.

Easy Apple Strudel

You couldn't get easier than this! This recipe is so simple, quick to prepare and is always a success! I have made it as stated and also into individual triangle using the small squares and using the egg-wash to seal the sides down and then pressing the tongs of a fork along the edges to make a nice finished look. I have also used blueberry pie filling. I sprinkled the top with cinnamon and sugar.

Avocado Green Goddess Dressing

Good recipe - I made some modifications. I left out the anchovies. I decreased the amount of mayo to about a little less than 1/2 cup and used reduces fat mayo. I increased the lemon juice to about 2 tbsp. and added a pinch of sugar to cut the tartness a bit. I also added some freshly chopped basil to it. It is a very thick dressing so you don't need a lot to cover the salad. I made it about 1 hour before I served the salad. I used it on a romaine salad with red onions, shredded carrots and chopped mixed peppers. Very good!

Colorful Coleslaw with a Kick

This was a really nice and light alternative to regular coleslaw! I will definitely make it again. I left out the hot sauce and only used about 3-4 tbs. of olive oil.

Spinach Whole Wheat Quesadillas

This was awesome!!!! It is so quick to make! I made it for lunch for myself - so I used only one low-carb. rectangular whole wheat wrap, placed the cheese on half the wrap, spinach and spices on top and cheese on top of that. I covered it with the other half of wrap and flipped it when it got crispy on one side. Delicious!

Cookie Dough for Ice Cream (Eggless)

This recipe is AWESOME!!!!! It tastes soooo good and is soooo easy to make. I made 4x the recipe as this recipe is very small. I made it 2x - once with smart balance margarine and once with smart balance LIGHT margarine - They both came out fantastic - so I will be using the LIGHT margarine from now on (the higher water content does make a differece - as this is not being baked. Also - It turned out less greasy that the one with regular margarine!) I took the advise of the other reviewers with a bunch of things - I used only light brown sugar instead of white and brown sugar (so for the original recipe - 1/4 cup of brown sugar. I added some salt, and used about 1 tsp. vanilla and 2 tsp. soy milk (adding liquid to get the correct consistency). I didn't have mini chocolate chips so i placed my chocolate chips into my food processor and chopped them up a bit... I rolled the dough into a bunch of thin snakes/logs, froze it on parchment paper on a cookie sheet and cut them into small pieces. I mixed it into homemade Ice-cream - DELICIOUS!!!!!! These cookies tasted like chocolate chip cookie dough and not sugar cookie dough with these changes. *UPDATE* I made this as the crust of "Fluffy Two Step Cheesecake I" and added little cookie dough balls to the batter and on top of the cheesecake and drizzled chocolate on top and froze it - It was awesome!
