Eggplant Parmesan II

Reviewed: Jul. 16, 2008
Very good recipe! My Mom and my husband loved it. Followed the recipe exactly. (I didn't sweat the eggplant and it was still exceptional) I only used 2 regular size eggplants and there was enough to take some to my elderly neighbor as well as leftovers for another night! Will make again for sure. Thanks for posting this recipe!

Zesty Slow Cooker Chicken Barbecue

Reviewed: May 23, 2008
very good! i used boneless skinless chicken breast, low calorie bbq sauce, light dressing and splenda brown sugar as well as another reviewer and it was delish. i cooked it on low for about 9 hours and the chicken was not done so i put it in the oven to finish. it came out sooo tender. i think my crockpot needs to be replaced as i've had it for 12 years and got alot of use out of it so, in order not to face the problem of uncooked food again, i threw it out, hey, no need to clean it!!! i'll just buy another one cause i'll be using this recipe again! thanks for sharing =:)

This is a very tasty soup. My daughter loved it and asks for it often. I have used chicken instead of the turkey as well. Taste great! Thanks for the recipe!

Chicken Piccata II

Reviewed: Mar. 27, 2008
WOW! I made this last night and it was wonderful! Very tasty sauce. I double dipped the chicken coating and refrigerated it for 30 minutes suggested by another reviewer and also doubled the sauce amount. Next time I'll triple it though. The only other thing I changed, I used low sodium soy sauce, unsalted butter and Herb-Ox no sodium chicken boullion and it still turned out great. Will use this again. THANKS!

Baked Asparagus with Balsamic Butter Sauce

Reviewed: Mar. 24, 2008
The taste of the asparagus/sauce flavoring was great. I don't what I did wrong but the asparagus was a bit stringy. I'll try it again and see what happens. Any ideas about the stringy asparagus?

Honey Glazed Ham

Reviewed: Mar. 24, 2008
I always bought a honeybaked ham for holidays but now that I have this recipe, I'll save some money!. I cooked it in the crockpot using cookeratheart's reviewed suggestions. I did put the tiny carrots on the bottom and was disappointed in the taste of the carrots but maybe that's because I used a crockpot liner so the juices of the glaze was not able to caramelize the carrots, anyway the ham had a great taste, no oven, everyone loved it. Thanks for the recipe and the reviews, they really helped!

Italian Easter Cookies

Reviewed: Mar. 24, 2008
I was looking for a recipe to replace a lost recipe given to me by my husbands first generation Italian grandmother many years ago. This one came pretty close but not exact. Until and/0r if I even get my hands on the original, this will do. I didn't bother with the fancy time consuming knots that wouldn't have been seen anyway, besides the original recipe didn't include that. I will make them again. Thanks for the recipe!

Raspberry and Apricot Rugelach

Reviewed: Nov. 30, 2007
I tried this recipe for the first time for my Aunt and Uncle for Hanukkah. My uncle is Jewish, my Aunt (and family) are not. I bought a Hanukkah card which had a reference to rugelach, so I found out what it was and decided to try it. I find that this recipe calls for speed when handling the dough from frig to oven. Also the amount of raspberry filling had to be cut in half due to the fact that the first batch burnt because of the filling spilling out from the insides while baking. I basically painted the filling on with my pastry brush and that was all I used. I had better luck with the second batch and plan on making it again as with only half the cookies(to give away) there aren't any for me! I did try them and they were delicious!!! ***************************************** Ok, I made these again and thought I'd share a tip concerning handling the dough. When I make these, I now separate the dough into 4 equal pieces. I take each individual piece and put it between two pieces of wax paper (before refrigerating), I then roll out the dough, while it's between the wax paper and refrigerate them with the wax paper intact. After 10 minutes or so, just peel off the top layer of wax paper and continue with the recipe. It makes it sooo much easier. Trust me! Good luck:)
