Antipasto Pasta Salad

I followed the directions except for the dressing. I didnt have the ingredients, so I just bought a bottle of Newman's Own Family Italian and it still got rave reviews. People kept telling me to try it at the Easter dinner and I was like, I made it! Everyone absolutely loved it! Oh, and I just used a block of sharp cheese and cherry tomatoes cut in half. This was awesome and easy with my changes, but Im sure it would be even better with the real dressing and asiago.

Miracle Lasagna

Wow, was this easy!!! I did some alterations that others suggested, like pre-soaking the noodles, adding an egg and some spiced to the ricotta mixture, some ground beef and spinach. Super fast to put together, not a big mess and very good!!

Sloppy Joes II

This was really tasty, great flavor, but a little dry for my husband and I and that was after adding about 1/2 c. of water before simmering. It was super easy to make and super versitile. Next time, I will try adding some hot sauce or cajun seasoning for something for variation. :)

Carrot, Potato, and Cabbage Soup

So flavorful and delicious! Left out the oil, subbed veggie broth and added a pinch of red pepper and sage (only a PINCH!) and it is fantastic! Would try again without the potatoes to make carb free.

Sarah's Applesauce

This is the second time I made this and it was COMPLETELY different! This time, I loved it. I used a pumpkin pie spice instead of straight cinnamon and it was AWESOME. It is good warm or cold and is like a delicious apple pie filling!

Pumpkin Pie I

Probably only 4 stars because I messed it up a little. I forgot the corn syrup and didnt mix the ingredients in the right order, but it worked out well and tasted good!

Pumpkin Chocolate Chip Cookies III

These were really good! I used applesauce instead of oil and fresh pumpkin instead of canned. I also used a nutmeg, clove, cinnamon mix I had, too and left out the nuts. These are cakey, not dense like cookies, but healthy and delicious!

Pumpkin Pie Bread

This was SO delicious! I improvised in a few areas... I didn't sift anything, I used fresh pumpkin puree, and only a 1/8c. water since the pumpkin was more watery than canned. I also added a tablespoon-ish of brown sugar and a squeeze of honey for a little extra flavor. Very moist! Muffins were awesome, too!

Classic Macaroni Salad

Really good! I made a few changes. No carrots, added ground red pepper and 5 hard boiled eggs, used 1/2 FF sour cream and 1/2 lite mayo, mixed Dijon and yellow mustard, and used just under 1/4 c. sugar. Even though it was "healthier", it still had plenty of taste and went over well. I love that it is moist, but not mayonnaise-y and soupy! If I had used all regular mayo, I bet it would have gotten 5 stars!

Delicious! My bf loved it, too. I added tomatoes, onions, white wine, butter and extra garlic and served it over long grained wild rice. It was nice and saucy!

Barbequed Pork Ribs

Super easy and mostly prepared a day in advance, which makes clean up a snap! The ribs were AWESOME! I didn't have a blender, so my onions were chunky, though it didn't really matter. I only boiled 1 hour, should have been a little longer. They were pretty tender and the sauce was delicious with Sweet Baby Ray's!

Easy Cajun Grilled Veggies

I loved this! I followed the recipe except I added mushrooms, too. Next time I might reduce the olive oil and add chicken to the skewers. My first dinner cooked for the in-laws, they were impressed! Thank you!!

Chocolate Chip Cookie Ice Cream Cake

I never realize ice cream cake was so easy to make! I did the ice cream in layers and uses 2 flavors. In between, I put more fudge and cookie crumbs. This cake was awesome and the hit of the party!
