Zucchini Bars

Fabulous icebox cake! I took the advice of others and used 1/3 c. oil and 2/3 c. applesauce instead of all oil. I used a 15x10 pan, baked for 30 mins. and used a favorite cream cheese frosting recipe: 1 c. butter, 1 8oz pkg cream cheese, 1 box powdered sugar and 1 t. vanilla. Frosts the sheet cake perfectly. Store it covered in the frig. Huge hit with everyone!

Fabulous Beef Tenderloin

This was delicious! I used low sodium soy and regular butter. Cooked a 2.75 lb. tenderloin about 1 hr 15 mins and it was perfect.

Fresh Salsa

Excellent starter recipe. Like others, I added about a 1/2 c. of chopped cilantro. I also substitute finely chopped green pepper for the jalapeno as my family prefers that. This is very good and a great way to use garden tomatoes.

Pork Fried Rice

This is a great starter recipe. Lots of possibilites! I used leftover pork loin and sauted in sesame oil as others have suggested. I also used fresh ginger. It was very good!

Greek Orzo Salad

Great Recipe! I used bottle Greek salad dressing and also added chopped green pepper. I usually make Italian pasta salad so this was a refreshing and delicious change of pace. Will definitely use for upcoming potlucks this summer!

Easy Italian Sausage Lasagna

Not sure why others found this flavorless! Italian Sausage is loaded with flavor by itself. I took some others' suggestions and added garlic powder and italian seasoning to the sauce. Also used double the amount of sauce. It turned out great.

Citrus-Topped Pork Chops

I made this for my husband and another couple and we all loved it! It is a refreshing way to cook pork chops. And they were wonderfully tender. I omitted the dry mustard and ginger, instead using a tablespoon or so of honey mustard.

Ham Bone Soup

Great recipe! I followed it exactly except used low sodium chicken broth instead of the bouillon and water. I will now make this every time I have a left over ham bone rather than the old ham and beans.
