Cindy's Awesome Clam Chowder
This was better than most clam chowders I've ordered in restaurants! I didn't have everything on hand, so I tweaked things a bit. We had a vegetarian guest over so I ommitted the bacon (I know EVERYTHING is better with bacon, but I thought it tasted pretty darn good without it), and to give it a bit more flavour, I sauteed celery and leeks in olive oil first and then added the potatoes. I also ommitted the carrots (my husband won't eat cooked carrots in any form). I only used one leek soup package instead of two, but everything else I followed and it tasted great!

Artichoke Spinach Lasagna
This lasagna turned out fantastic! I followed some other reviews that said the noodles didn't have to be cooked beforehand and just used oven ready noodles and mine didn't turn out runny at all. I also added a layer of eggplant (cut lengthwise) and ricotta cheese and topped with cheddar rather than feta. Turned out fantastic and was super easy to make! Will definitely be making again!

Banana Oat Muffins
These turned out okay, but I did change the recipe a bit. I doubled the banana (I like more of a banana flavour) and added blueberries. I also substituted agave nectar for the sugar and then reduced the milk and oil (since agave nectar adds more liquid). These were very moist, but tasted like something was missing.
