Chicken Enchiladas II

Yum! But I will admit that I change several ingredients...I substitute a few cloves of garlic for the onions (my pregnant tummy can't stand onions!), and heat chili powder and cumin with them in the oil (per another reviewer's recommendation). I also substitute a chicken stock roux for the cream of mushroom soup (that stuff is pretty bad for you). I also substitute canned beans (black or kidney) for some of the chicken, to save money. But I love the method for this recipe and always use it to help me put together my enchiladas!

Enjoyed this very much! It was a good contrast to some baked chicken in cream sauce. (I would maybe cut back a tad on the salt next time...but my husband loved the salt, so that might just be me!)

Baked Potato Soup

Love this recipe! I usually leave out the bacon, just because it's expensive....but I use homemade stock, and a little bit of beef fat to make up for the bacon drippings. I have made it with bacon once, though. Either way, it's so good and satisfying! My husband loves it even without meat, and he's a meat guy so that's saying a lot! (I also substitute beef stock for chicken stock when I don't have the latter, and it still tastes yummy).

MMMMM... Brownies

Excellent! I actually liked them even better the day after. :) (side note: I substituted rapidura for the sugar, cause even though it's still a kind of sugar it's a little less processed...And I put in a whole tsp of vanilla because I like vanilla :))
