Carrot Cake III
Very moist and delicious! I omitted the nuts, because these were for my daughter's friends and some have nut allergies. I also cut the oil down to 3/4 cup. I didn't add anything to make up for it. And, I used 3/4 cup natural cane sugar and 3/4 brown sugar instead of the 2 cups white. I used 1 Tablespoon vanilla instead of 2 teaspoons. I made 2 dozen cupcakes instead of a full size cake. The cakes were plenty sweet and moist even after I reduced the oil and sugar. I made the icing (save the pecans) according to recipe, and it was very sweet, so I used it sparingly and the cupcakes came out just wonderfully!

Grilled Chicken Thighs Tandoori
I used 2 containers of Greek yogurt (which came out to 14oz instead of 12), and I forgot to buy ginger, so I used 2 teaspoons powdered ginger instead. When I tasted the marinade, it tasted really bitter, so I added 2 Tablespoons lemon juice and 1 Tbsp sugar and I thought it was a bit less bitter tasting. I only marinated for 4 hours too. The chicken came out great regardless. Really fantastic, moist, flavorful chicken! I think this is a fabulous recipe that can be played with. The chicken turns out wonderful!

Simple Ranchy Breaded Fish Fillets
I'm giving it 4 stars for potential. I think the idea is great! I did what everyone else did and mixed the ranch seasoning with the breadcrumbs, and I found that was not flavorful enough, but I had tons of breadcrumbs left over. So, next time I will use probably halve the amount of breadcrumbs. I think that would be about perfect. Also, my way of cooking tilapia is to fry in a medium-hot pan for 3 minutes on each side and then throw it in a 375 degree oven for 8-10 minutes. Deliciously crispy!
