Good Old Fashioned Pancakes

The pancakes were very good. I took the advice from other reviewers and cut down the salt to 1/4 tsp and added a tbsp of lemon juice for "buttermilk." I also used almond milk in lieu of regular milk and whole wheat flour instead of regular flour. I used a non-stick cooking spray and the pancakes came out very dry. So then I used grapeseed oil for cooking oil instead, and then FINALLY the pancakes came out beautiful.

Best Black Beans

My hubby and I loved this recipe! We're both vegetarian and this was an ideal dish. I took a reviewer's advice by using simmering the beans in chicken broth, I skipped the onion (only because I was out) and I used a variety of spices and a hint of honey. This came out delicious. Thank you for a healthy, budget-friendly recipe.

Cocoa Oatmeal Cookies

These cookies came out really good. I made a huge mistake by putting the dough on parchment paper, then they started to burn in the oven...oops. Then realized to put them on regular baking sheets- what a difference. I made a couple of revisions: I substituted regular flour for whole wheat flour, and since I didn't have any cocoa powder, I used instant coffee instead. I omitted the raisins too. Delicious! Nice and moist.

Corn Muffin Pancakes

Very good recipe- my family and I really enjoyed these pancakes. I made a few revisions for a healthier pancake: I swapped the cooking oil for sugar-free applesauce, swapped regular milk for almond milk, and regular flour for whole wheat flour. I even used whole wheat corn muffin mix as opposed to your standard muffin mix. These are delicious with pure maple syrup. Yum!

Lazy Lasagna II

This was a smashing success! What an easy, quicker alternative to lasagna. I highly recommend this recipe to lasagna lovers who are a little lazy (lol). I took the advice from the other reviewers- I used 2 sauces of pasta sauce. This definitely needed that amount of sauce- plus you'll get more robust flavor that way. My hubby is a vegetarian, so in lieu of ground beef, I used vegetarian sausage patties. Yummy!!

Applesauce Oatmeal Cookies

Still baking these as we speak- I tried a couple from the first batch, and they are pretty good considering they are healthy and more wholesome than your typical sugary cookie. Due to the high volume of "tweakers," I took the recommendations and added 1 tsp of vanilla and more cinnamon. I used whole wheat flour and a tad bit more applesauce. I added some flaxseed to make these even more healthy, and I even added some chopped canned peaches for a fruity kick. As many people said, these definitely came out cakey, but they are still good and a great alternative to a high-fat, high sugary cookie.

Apple Oat Snack Cake

Wow! That's my first thought when I took my first bite. Very delicious, very moist, thick and cake like. My husband and his mate were raving about it. In fact, mine looked way more yummy than the picture you displayed HAHA.

Peach Kuchen

I had all the ingredients to make this recipe, so I figured, hey why not. I was worried that it would come out flat or not moist enough...but I decided to give it a shot anyway since it had pretty good reviews. I must say- this came out delicious. It was more than what expected. Very good! Thank you for a nice, easy recipe :)
