Neiman's $250 Cookies

Yes, this one is the real deal (in the urban legend that is)and I have a ratty old photocopy of the original letter dated 2/27/1991 that was passed around in hand typed memo format to prove it. The Neiman Marcus website prints another version and says it ain't so to the legend. Maybe their new version is good, but ain't the one they allegedly charged $250.00 for. Anyway great cookie, have made it many times. The five cups of oatmeal should measure around 4 2/3 cups after it's run through the blender.

Italian Bow Tie Supper

Tried this with a pound of JD regular pork sausage and it was great. Even with minimal spices and both of us sick with colds and our ability to taste gone to heck, well we liked it! Will put this in my keepers file. I did hold back on the pasta, used about 12 oz dry.

Magic Cookie Bars from EAGLE BRAND®

MIL introduced me to these easy bars years ago. Nowadays my daughter makes them and all her friends on the college rowing team swoop in and snatch them all! They have no shame, LOL. I put the nuts on first, then the coconut, then pour sweetened condensed milk over and add the chocolate chips last. DD does the milk last. Also I've always used one cello paper package of crackers and a few extra for good measure. Haven't ever measured the actual amount of crumbs. However, I think the boxes have gotten smaller. Didn't there used to be three packages with eleven crackers in each? Now there are only nine crackers in a package. Hmmm!

Lemon Pudding Cake I

Just like I remember Lemon Pudding Cake. Yum!! Only thing was the batter looked too soupy as I was putting it together so I held back on the milk. Just used 1 cup.

Cranberry Almond Biscotti

This recipe makes an excellent dry, crisp biscotti with lots of flavor when dipped in a hot drink. As a personal preference, I did add orange rind, sliced very thin and 1/2 tsp almond extract. Will try next batch with Amaretto. I like the fact that these biscotti don't crumble, probably because eggs are the only fats used.

Hamburger Stroganoff

Great ground beef recipe, serves four or serves two now and freezes half the beef mixture for later. Tastes just as good as my traditional Beef Stroganoff recipe. The lemon juice does something that makes the hamburger taste just like the original simmered sirloin steak. I especially like that this recipe doesn't call for a can of cream soup, which not only is becoming very expensive, but canned soup means processed food for me. Beef broth and fresh mushrooms can easily be exchanged for the canned. Except for using egg noodles for the pasta, I did make this recipe as stated for my rating.

Playgroup Granola Bars

Love that these go easy on the sugar. Followed another reviewers idea of 1/3 c. brown sugar, also cut the honey back to same amount. Still very sweet. Baked full amount of time in 8 x 11 pyrex dish. Used 1/2 c. raisins and 1/4 c. chopped dates.

Chicken Caesar Pasta

Added two stalks of celery for some crunch and used 3/4 c. barley, whole 15 oz cans of beans and corn then adjusted recipe calculation to nine servings to get right amounts for dressing. Left rest of amounts as stated.

Zucchini Brownies

Followed recipe nearly to the letter and found brownies to be quite good. Only difference was using just a pinch of salt, and omission of frosting. I used fresh picked homegrown zucchini which were very moist and gave batter the right consistency, easy to spread in pan. I appreciate that this recipe was well thought out, allowing some oil to keep brownies from being rubbery, yet cutting fat content.

Penne with Chicken and Asparagus

Got an "Anytime" from husband. Has that Napa Sonoma appeal. Easy to fix, can be a one pot dish using same pot for each stage of cooking. Added red bell peppers. Only concern is amount of asparagus, a bunch of asparagus is confusing if you grow your own. Will need to check next time at the grocery to see what a bunch weighs.

General Robert E. Lee Cake II

Oh my! My husband, also a true southern gentleman, loves it. A very lemony and delicious sponge cake. Had some lemon curd I wanted to use and tried it with this recipe, so I've yet to try the filling for this. Used the frosting just around the side of the cake and put lemon curd on all the layers and top.

Yummy Potato Skins

Great idea! Have an old Cusinart with 2 inch chute opening for slicing/dicing and wanted a way to use trimmings from potatoes. Even strips with no peel came out tasty. Used olive oil and favorite spices sprinkled over once tatters were arranged in the pan. Baked until crispy on foil lined pan then coaxed them off the foil as it cooled.

Almond Chicken Casserole I

Monster size casserole!! Used some wild rice mixed with the white rice and subbed sour cream for yogurt. Omitted lemon juice, water chestnuts and only used 1 tsp salt. Used canola oil in spray can over bread crumbs for topping. Have also made this with leftover turkey and broth from turkey. Makes a satisfying economical main dish.

Soft Chocolate Cookies

Turned out some nice cookies. Made half the batter with a 1/3 cup of cinnamon chips. Those were more interesting. Used a smidge of cayenne pepper and smidge of black pepper on the other half. Just got chocolate taste. Will try some tobasco sauce next time, see if that blows anybody off the sofa.

Apple and Brown Rice Salad

Interesting dish. Probably should get kicked for posting a review and not following original recipe exactly, but didn't have any orange yogurt lying around. Used zest and juice of an orange and that worked pretty good with the low fat mayo.
