Quinoa with Ground Turkey

Excellent and simple. I changed it by adding lemon juice, garlic, basil, thyme and oregano. I also put a bunch of bell peppers and carrots in there and of course a jalapeƱo which in my book makes everything better. This is a great, healthy, high protein meal that I've made a few times now. I make a bunch and keep leftovers in the fridge for a fast hot meal. Yum!

Cajun Style Baked Sweet Potato

This is such an easy and tasty way to eat sweet potatoes. I made it for a small dinner party and it was a big hit. I cooked them until they were just about well done (soft inside and a little crispy outside) and used a little higher potato to spice ratio, and upped the cayenne. The spicy and sweet combo is a winner!

Chicken Tortilla Soup V

This recipe is wonderful! Easy, fun and sooo delicious! I agree that it can be very thick so I put a bit more chicken stock in it. Also, I've found too that boiling chicken and shredding it makes for better soup. I also have taken to putting light sour cream in to the soup to thicken the broth. You can also throw most any veggie in here, I like using fresh jalepeno/habenero from the garden (California is wonderful for that!) or bell peppers too. Instead of chips, I take tortillas, cut them up, sprinkle garlic and onion salt on them and bake them. This helps make the recipe a bit lower in sat. fat.
