Yummy Eggnog Pie

This was awesome! Made enough for two pies. The hardest part is whipping the cream, but that is an awesome activity, made easier with chilled metal bowls.

Javi's Really Real Mexican Ceviche

Used Tilapia instead of half the shrimp and am glad I did! This made soooo much! It was awesome, the tilapia was a little less expensive and there was plenty of fish in the Ceviche and it tasted awesome!

Fish Chowder

Quite literally the best Chowder I have ever had. I followed the recipe to a T, scaled down for only 12oz of fish. The entire way through the process I had trepidations...it just seemed like the scaling was wrong. At each point though every thing turned out just correct. Thank you, oh the Old Bay spices are awesome. They had them at a Sunflower Market here in Tempe, AZ. Fish Chowder in the desert!

Gourmet Sweet Potato Classic

Made this for Thanksgiving potluck. It was quite literally fantastic! None made it into leftovers, of which there were many others. It tasted like beautiful candy which complemented cranberry sauce with the turkey. It was a delightful combination. I had less sweet potato than should be used so the sweetness was intensified, but utterly delightful. The taste fluctuated between the pecan, sugar, cinnamon and vanilla while being solidified by the heavier ingredients. The sweet potato accented the entire dish. I used locally grown, organic sweet potato so they were smaller than most of those in the store.

Sunday Gumbo

I forgot that I knew how to make Gumbo! Thank god this recipe popped up. It was excellent, I think my Mom might even like it as it is not too hot. Next time I make it for friends and family as well.

Mustard Crusted Tilapia

Tasty mustard crusting! I used a mixture of 3/4 tbsp of Bertman's Ballpark Mustard (nothing like it!), 1/2 of Dijon Mustard, and and 1/4 Honey Mustard that was great. Then I forgot the bread crumbs...which was OK. I also broiled the filets for 5 minutes past the baking time to get the crust crunchy.

Lemon Garlic Tilapia

Awesome! I tried a couple of variations, cooked 12 minutes at 400 Fahrenheit, sauteed the garlic in the butter, added garlic powder and cayenne pepper (just a dash of cayenne...a lot of garlic powder). Served with a spicy mustard dipping sauce (which was totally unnecessary but looked nice on the plate) and roasted garlic potatoes. Delectable! I will do this regularly and in a larger setting for friends and family. I think I will also try it with collared or mustard greens and basmati rice.
