Green Salad with Dried Mint

I loved this recipe, but I only gave it 4 stars, based on the changes that I made. 1. I used marinated avocado instead of hearts of palm. I added fresh ground pepper. I also added diced red pepper, sliced some string cheese, used kalamata olives and diced them very small, added agave nectar and white wine vinegar to the olive oil. I didn't have any cucumber, although it would have been a nice touch. Fresh mint would also have been nice, although the dried mint tasted light and really made the whole salad. Overall, it's seriously one of the best salads I've ever eaten. The avocado really adds a nice creamy touch, and the combination of savory and sweet ingredients is superb.

Barbeque Halibut Steaks

I made this last night for me and my fiance. We both loved it. I used paiche which was on sale at Whole foods. I made one little change to the glaze, I added about a tbsp of minced ginger. We will definitely be having this again soon.

Mahi Mahi with Coconut Rice and Mango Salsa

Wow. We had this tonight for dinner and it was awesome. Normally I will tweak a recipe, but for this I followed the recipe pretty much to a T. The coconut rice was a HUGE hit with my fiance, who is generally not a fan of coconut. If I were to add anything to this, it would be some nice chopped cilantro at the end. Overall, I rate this delicious!

Asian Style Country Ribs

I totally screwed this up, but I think it was to my advantage. Instead of marinating overnight, I braised the ribs in the marinade mix, but added 1 cup of water to thin it out and then threw the ribs in the slow cooker. Cooked for 2 hours on high, and then 3 on low. The ribs are falling apart, just like they should be and delicious!

Brown Sugar and Mustard Ham Glaze

This was easy and delicious. I added some pineapple juice, which made it very sweet, but I simply added more mustard to even out the flavor. A definite do-over.

The Best Thai Peanut Sauce

I loved this sauce. I used it with Thai Lettuce Chicken Wraps. Delish. My only change was to add 2 tsp of sugar. Probably missing because I used all natural almond butter which has no added sugar itself. I will definitely make it again.

Slow Cooker Cranberry Pork

We totally enjoyed this recipe tonight. It was delicious. I took the juices out of the pan afterward and I poured them into a roux (butter and flour) and it made an amazing gravy. I also paired it with my own apple craisin compote. I'll post the recipe. Absolutely amazing.

Pork Chops 'n' Pierogies

Totally yummy. I used olive oil instead of butter to sautee the pork chops, onions and apples, and then added 1 tbsp of butter to make the sauce with the vinegar and sugar - just to make it a tad more heart healthy. I also seared the pork chops with a middle eastern dry rub first. Finished off the meal with an asian slaw. It was absolutely delish! Loved it...

Louisiana Shrimp Casserole

I loved this recipe. I couldn't find Cream of Shrimp soup, so I substituted Shrimp Bisque instead. The sour cream gives it a really nice tang. YUMMY!
