Green Salad with Dried Mint
I loved this recipe, but I only gave it 4 stars, based on the changes that I made. 1. I used marinated avocado instead of hearts of palm. I added fresh ground pepper. I also added diced red pepper, sliced some string cheese, used kalamata olives and diced them very small, added agave nectar and white wine vinegar to the olive oil. I didn't have any cucumber, although it would have been a nice touch. Fresh mint would also have been nice, although the dried mint tasted light and really made the whole salad. Overall, it's seriously one of the best salads I've ever eaten. The avocado really adds a nice creamy touch, and the combination of savory and sweet ingredients is superb.

Barbeque Halibut Steaks
I made this last night for me and my fiance. We both loved it. I used paiche which was on sale at Whole foods. I made one little change to the glaze, I added about a tbsp of minced ginger. We will definitely be having this again soon.

Mahi Mahi with Coconut Rice and Mango Salsa
Wow. We had this tonight for dinner and it was awesome. Normally I will tweak a recipe, but for this I followed the recipe pretty much to a T. The coconut rice was a HUGE hit with my fiance, who is generally not a fan of coconut. If I were to add anything to this, it would be some nice chopped cilantro at the end. Overall, I rate this delicious!
