Lord Baltimore Cake

Rating the cake, not the frosting. This cake was good, but not fantastic. I baked it on a Thursday, wrapped in plastic overnight then layered, filled, frosted and covered in marshmallow fondant on Friday, assembled the tiered cake and served on Saturday. On Thursday and Friday it was very moist, but had dried out considerable by Saturday. It was rather crumbly on both Friday and Saturday and did turn out a bit more dense than I was hoping even though I used a good cake flour and did not over beat. I would make this cake again, but may fuss around with the ingredients a bit. It is a great egg yolk sink when you have them left over from making meringue (or swiss meringue buttercream frosting, yummm). The flavor was very good.

Coconut Cream Cake I

I was so disappointed after reading all the great reviews. There was absolutley nothing special about this cake! It tasted exactly like what it was... a box mix with syrup poured over it. Was it "bad"? No, but it wasn't fooling anyone either. And it surely wasn't worth the 4 dollar can of coconut cream. Won't be making this one again.

Banana Date Flaxseed Bread

Very delicious... and pretty guilt free :) Followed the directions exactly except did not add dates. Mine took exactly 60 minutes to bake and came out perfect!

Chocolate Cappuccino Cheesecake

The alcohol cooking off gave it a strange after taste. Still edible and good, but no where near great in the world of cheesecakes.

Pumpkin Cheesecake II

Absolutely delicious!! Everyone was raving about it at thanksgiving dinner! The only thing I did different was add cloves and nutmeg in place of mace (since I didnt have any). I cooked for 1 hour in a water bath then turned the oven off and let cool in the oven for another hour, then let cool on the counter for another hour and then into the fridge it went. No cracks, no sinking, just a beautiful cheesecake :) I made some cinnamon whipped cream for the top- I highly recommend some sort of whipped cream since it really complements the flavor of the cake well and helps to cut a little of the sweetness.
