I have my own catering business and have enjoyed cooking and doing this professionally for over 20 years. I cater from small (dinner at your house) to large (weddings of over 300).

My favorite family cooking traditions
Lasagna on Christmas Eve. I do belong to a cooking club too. We get together once a month and host everyone with dinner at our house. We take turns. We've been doing this for about 7-8 years.
My cooking triumphs
I competed in a National Cooking Challange at Disneyworld against 9 other chefs. I took a bronze metal.

Chicken Honey Nut Stir Fry
I made this the other night and thought it was very good. I did not use all the o.j. when doubling the sauce like I always do. I used 1/2 cup chicken stock and 1 cup o.j. I was afraid it would have too much of an orange flavor as per one reviewer. I did add a little more honey and soy sauce, but that was my preference after tasting. It could have been because I used less orange juice, which would have made it sweeter. I didn't have cashews, so I used peanuts. I thought it was really good.

Bacon, Lettuce, and Tomato Macaroni Salad
I made this recipe today and it tasted great, but I did make some changes. I was trying to use up some produce I had on hand, so I used the following: 1/2 cup chopped leeks instead of green onions, 12 oz. rainbow rotini instead of elbow (did have elbow on hand), I used red wine vinegar (like so much better than white), 4 roma tomatoes, seeded instead of large, 1/2 orange pepper, diced, 2 T. fresh parlsey, 1/2 cup pre-cooked bacon, 1 tsp. Mural of Flavor seasoning -salt free (from Penzey's Spices)Just bought it and thought it would add that little something I think some people said it was missing, no salt, all other ingredients stayed the same, It made about 1/2 gallon of salad. Very colorful and I'm waiting till flavors meld and it sits in refrigerator before adjusting seasonings, if needed.

Out of this World Turkey Brine
Excited to try this brine this year......After reading the reviews, I wanted to send out this note about NOT using black garbage bags for your turkey. You should not use anything that is not food grade or meant for food to be in. There are chemicals that they treat those bags with.....so please find Zip-lock or something else that won't make your family sick......I've been to many food safety classes just so you know that I know what I'm talking about. I'm a caterer and work with school food service too.
