Maple Salmon

I've made this twice and love it. I grilled it for 1 minute flesh down to get some nice grill lines and then I turned it skin side down over indirect heat until it was done. 1 lb was closer to 3 servings with a side dish, not 4. I've marinated it for just an hour and that worked, but I think 2 or more is better.

Roasted Sweet Potatoes & Onions

This was excellent. I thought it would be drier like other roasted potatoes, but in fact it was moist. But it was excellent. I substituted slivered almonds because I had them, but I think sliced would have been a little better. And remember to put them on just before serving or they would have been soft.

Macadamia Nut Crusted Tilapia

This was wonderful. I didn't have Macadamia nuts and substituted unsalted cashews. I'm suspect Macadamia would be even better, but it worked. It had a nice Indonesian flavor.

Corn Casserole III

Made this for Thanksgiving and everyone loved it. Will try a version with chilis somtime soon, but loved it as is. Definitely soft and not too sweet. Good with or without turkey and gravy. We did this in addition to stuffing, not instead of.

Quick Savory Cranberry Glazed Pork Loin Roast

Delicious, but still not sure I'd serve it for the President. Still we loved it. Easy to make anytime, not just the holidays. And the amount of sauce in one batch was ample for our 3 lb pork roast with lots to spare for gravy on the table.

Almost No Fat Banana Bread

We love this and make it often. I don't think we change anything. It does dry out quicker than breads with more oil, so plan to eat it the same day!

Cranberry Sweet Potato Bake

This was terrific. We served it as a side with turkey at Christmas dinner. It was sweet, but that worked well with the tartness of the cranberries. Next time I might try it with a little maple syrup, or maple flavored granola.

Molasses Sugar Cookies

My son and I made these as a holiday gift for his teachers at school. They were terrific! And the advice to use a piece of bread to soften the cookies if they dried out worked perfectly.

Yummy Sweet Potato Casserole

We brought this to our parent's house for Thanksgiving dinner and it was a blast. Everyone loved it. We didn't modify it except to substitute some cream for milk (because we had it already). We also loved Cranberry Sweet Potato Bake.
