Roasted Winter Squash Seeds

Recipe followed for 5 servings-- approx. 1 1/4 cups of acorn squash seeds (from 4 squash). Seeds were soaked overnight to remove pulp, then spread over newspaper over another night to dry before mixing with olive oil and salt.
