Maple Dill Carrots

This is the best way to have cooked carrots! My family loved them. I used dry dill and not quite as much butter.

House Fried Rice

Easy and delicious. My kids and husband enjoyed this, I didn't have any meat so I just used shrimp and added some powdered ginger to spice it up a little.

Fish Fillets with Stuffing

My family didn't like this recipe too much. My microwave cooked the fish unevenly so parts of it were dry and parts were still raw. The stuffing was very good and not too high in fat so I may make it again but next time I will cook this dish in the oven.

This was easy and very good. I used crushed tomatoes instead of chopped and vegetable boullion cubes because that's what I had on hand. My kids really liked it too.

Spinach Chickpea Curry

The best thing about this recipe is how delicious it is, the second best thing is how easy it is to make! I followed the recipe with the exception of using a bag of frozen spinach instead of fresh and I forgot to add the basil. Served with basmati rice and indian pickle.

Sweet and Sour Faux Meat Balls

My family loved these. I used fat free cheddar and cottage cheese. Really good, but the texture is more like stuffing than a real meatball. We had these with mashed potatoes and a vegetable for dinner.

Coconut Curry Tofu

Everyone in my family loved this recipe. I cut the tofu into cubes and stuck them in the freezer for about an hour. I used canned mushrooms, canned tomatoes, frozen pepper strips, green cabbage and no basil. It was easy and delicious!

Fra Diavolo Sauce With Pasta

My family thought this was good but not great. It tasted a little too fishy but I have to admit that I cooked the scallops and shrimp in the sauce rather than cooking them separately and then adding to the sauce. I think some sherry or wine would be a nice addition to this sauce.

Tofu Parmigiana

My husband said this was the best tofu thing he has ever had and would be willing to have it instead of chicken parmigiana! My kids liked it too. I didn't have bread crumbs so I put a couple of slices of fresh bread in the food processor. I cut the tofu and froze it and then had to run it under water to get the coating to stick. Like a previous reviewer, I coated the tofu with flour, egg and breadcrumbs, sprayed with cooking spray and baked until lightly browned. Delicious!

Cream Puffs

These were very good but I don't think they tasted as good as the frozen ones from the grocery store. I followed a previous suggestion of using a melon baller to scoop the dough and baked the recommended length of time. They came out great. I used a doubled ziploc freezer bag with a decorator tip to pipe the filling in which worked fine. I topped some with melted semi-sweet choc chips and left some plain. Everyone loved them but I don't think I will make these again because IMO the frozen pre-made ones are better.

Whole Wheat Honey Bread

This bread recipe was very easy to make. I didn't have dry milk so I skipped it and I also didn't add the shortening. I did add 3 T. of vital wheat gluten. Sometimes I have trouble with whole wheat recipes in the bread machine because they don't rise enough and end up being too hard and dense, this loaf had good flavor and texture and rose nicely.

Downeast Maine Pumpkin Bread

Trying to keep the extra pounds off, I altered this recipe and it was still excellent. Nice flavor, a little crunchy on the outside and moist on the inside. I used 1 cup of apple butter in place of the oil, replaced the 3 cups of sugar with 2 cups of splenda (the apple butter added some sweetness so I decreased the amount) replaced 1 1/2 cups of white flour with whole wheat and used 2 egg whites in place of 2 whole eggs. Of course, there was the splenda after taste, but still really good in spite of that.
