Zulandt's Lentil Casserole

Overall this turned out very good. Very inexpensive meal that makes A LOT (meaning several nights of leftovers). The only thing I didn't like is that it turned out a little drier than I liked, still edible but is there anything that can be done to moisten it up a little? I followed the directions exactly and it turned out pretty tasty. Just a tad on the dry side but nothing that would prevent me from making it again. :) I'm actually eating some of the leftovers for lunch as I type this!!

Rice and Lentil Casserole

Overall a decent dish, very easy to make. The one thing I noticed is that it was too salty for me, probably from the italian sausage. Maybe next time I will try a turkey sausage or something with less salt. I used low sodium chicken broth. A good, inexpensive meal. If you do not like onions you can omit, or reduce the amount.

Oatmeal Raisin Bars

Too Sugary! With the raisins and the sugar these are WAY too sweet. Cut the white sugar in half and cut the brown sugar to 1/2 a cup and you'll be good. These turned out ok but found in the summer you need to keep them refrigerated or they get mushy. I'll make again, but with modifications.

Sweet and Sour Chicken Stir Fry

This turned out OK in my book, my husband LOVED it. I guess my main peeve was that I used the "low sugar" apricot preserves but I didn't buy SMUCKERS, I bought an off brand and it had that weird diety, saccharin, aspartime after taste that diet sodas have. I will make this again but next time I am buying just regular apricot preserves and we'll see how they turn out. I served mine over a bed of white rice and once I got past the weird taste of the apricot low sugar stuff overall the meal was very tasty. EASY enough to make.

Slow Cooker Nacho Chicken and Rice Wraps

These turned out pretty good. I pre-cooked my chicken and rice (the recipe doesn't state to do either). But I had a hard time putting raw meat into the slow cooker, I just felt like it wouldn't cook proper & I was afraid if I didn't cook the rice it might not cook all the way in the crock pot and it might come out cruncy. So I precooked the rice & chicken. Mixed everything together in the crockpot and put in the refrigerator overnight (so I could just turn the crockpot on in the morning as I walked out the door to work!). I'm not a big fan of pace picante sauce, used it anyways and still liked the outcome. The cheddar cheese soup at the grocery store was completely sold out! UGH. I used broccoli cheese soup instead. I think this changed the taste of the meal a little but overall I was really happy with the way this turned out. VERY filling, simple, inexpensive and easy to make. I also threw in a can of black beans to the slow cooker. Yum.

Veggie No Boiling Lasagna

I gave this 4 stars because it didn't come out completely right. Not sure if it was my fault or the zucchini (water vegetable?) It was watery!! I followed the recipe exactly so I'm not sure what happened. Overall it tasted delicious! I refrigerated the leftovers and that hardened the lasagna a little bit, but it seems like the Ricotta maybe caused too much water during cooking? Not sure. I'll try this recipe again just to give it a second chance and because I like the idea of meatless lasagna. Hopefully it will turn out better next time!

Slow Cooker Tamale Pie

Very easy to make and FILLING recipe! This is a cross between chili & tamales. The cornbread turned out delicious! 4 or 5 bites of this and I was so full I could hardly breathe. Definately will be making again. The only thing I tweaked is that while cooking the ground beef I threw in some chopped onion & chopped green peppers. I served with chili cheese fritos and/or tortilla chips. Yummy! Also, is used lean (93/7) ground beef.

Turkey Wraps

Nice cool wrap for summertime. The only tweaking I did was that I used bacon bits (sparingly since they can become quite overpowering taste bud wise) & I used plain cream cheese and bought fresh chives which I cut up and mixed together with the cream cheese. I did use Dijon but sparingly, my husband is not a big fan of mustard and I really wanted him to enjoy the wrap! Super simple to make, rolled them up and off to the picnic and music in the park we went! Tasted great. Will definately make again.

Black Bean and Corn Salad

I make this salad the night before and let it sit overnight in the refrigerator so that everything can "mix" together. I then pack it in individual 1 cup containers for use at picnics in the park or to bring to work for a healthy snack. Good way to eat black beans (healthy) with a little bit of a kick with the cumin spice. The only thing I did differently was I bought black beans in a can that were "southwestern" and already mixed with cumin spice. I did not rinse my black beans off but you may want to because the cheese chunks get a bit "slimy", doesn't bother me but might bother others especially those folks (I have a few in my family) who freak out if they have to eat anything healthly like "black beans". Overall a very simple, easy to create and very healthy dish. I used lower fat/skim mozarella cheese to keep it on the healthy side.

Beefy Baked Ravioli

FANTASTIC! I rarely give recipes 5 stars but this one was great! Not only great tasting, but easy to make! I followed the advice of another reviewer & added tomato paste to thicken things up and I also added chopped onions and green pepper to the hamburger while it was frying. I could not stop eating this, my guests loved it, awesome!! Served it with some breadsticks and a green tossed salad and you have a simple, nutritious, inexpensive meal that does not take a lot of time to prepare.

Ground Beef Enchiladas

These were overall very tasty. However the only problem I had with rolling up my corn tortillas was that they would tear as I was rolling them up. I did heat them up before hand to make them more plyable, but it didn't seem to work. Still very good though!

Slow-Cooked Chili

Can you really go wrong with cooking chili in a slow cooker? Not really. Overall this was very good and you can add or change things as you wish. I always like to use chunky tomato sauce in my chili & lots of onion. Serve in a bowl topped w/sour cream & shredded cheese and you have the perfect comfort food on a cold winter's day!

Crumb-Coated Chicken Thighs

Very easy & simple recipe for a good dinner. You could use the crumb coating for chicken breasts, wings or drumsticks as well. I actually added some garlic salt and misc. spices to the breadcrumbs to give it that extra kick!

Easiest Slow Cooker French Dip

This turned out ok. I was not too happy with the consistency of the meat being for use in a french dip. I found that it is just easier to buy good roast beef from the deli, already sliced and use it for french dip instead of going the slow cooker route.

Blue Cheese Stuffed Mushrooms with Grilled Onions

Delicious! However, the only issue I have is that mushrooms can get soft quickly and turn a bit soggy. Not sure how to remedy this? They still turned out good and the blue cheese tasted soooo good.

Salmon Patties III

Very good! You can really alter any of these salmon patty recipes as you like. For me I used one can of pink salmon, about 4-5 red potatoes, egg, bread crumbs, chopped onions and I threw in a few handfuls of shredded cheese. Mashed everything together & fry until brown on both sides and semi-firm. These are delicious & there was tons of leftover to fry up the next night. This is a simple, easy dish and inexpensive and feeds 3-4 easy! If you don't like salmon I would recommend shredded chicken would work well also.

Creamy Chicken Stir-Fry

Very Good! The only change I made was that I used Cream of Chicken because I did not have Cream of Celery soup. It tasted wonderful! For veggies I used green, red, and yellow peppers, onions & broccoli. Also, I pre-mixed and heated the cream of chicken, milk, garlic mixture on it's own. I also stir fried the veggies on their own before mixing them with the chicken. Load the rice onto a plate, pour the creamy mixture over the rice, add your veggies and you're done. A quick, inexpensive, and healthy meal! Made even healthier if you use low sodium soup. Enjoy.

Irish Champ

Makes a nice, creamy mashed potato. I doubled the recipe because I needed more than what the recipe called for. I also added quite a bit more salt and pepper (it was kind of bland tasting if you only put a pinch of each in the dish) and I threw in two sticks of butter total. It came out very buttery and creamy and delicious.

Chicken Thigh Fricassee with Mushrooms and Rosemary

This turned out very well. I did not have any fresh Rosemary so I used some dried from my spice rack. I also did not have any cherry tomatoes so I just cut up some roma tomatoes and threw them in there. I also did not have the Nicoise olives and would have forgot to put them in anyway as I didn't even notice them on the recipe until after I'd made the dinner! Very simple dinner to make if you follow the recipe directions. I usually do not eat chicken thighs but was getting tired of eating the chicken breasts all the time and decided to try thighs out for once, and this was definately a good recipe to spice them up a little.

Alfredo Sauce

The main reason I wanted to make fresh alfredo sauce is because the jarred versions in the store always have an odd/tangy taste to them that I can't describe. I wanted to see if I could make some fresh alfredo from scratch. This recipe turned out pretty good. I found that with all the parmesan the alfredo was a little bit on the salty side. Also, if left sitting for too long after you pour it over the noodles it sort of separates, hardens a little. Not sure how to alleviate that issue. I did not have any parsley so I just tossed some basil with it. I would make this again but need to figure out how to get rid of the over saltiness taste.
