Sour Cream Frosting

Like many others, I was out of cream cheese and the carrot cake needed frosting. Delicious! This may be my new favorite frosting. Very easy. Ingredients anyone would have on hand. I think the variance in the consistency by reviewers is due to the sour cream - stiff or watery? Mine was a bit watery compared to others I have purchased. So, I slowly added a bit more confectioners sugar than called for until I reached the desired consistency. In total I added about 3/4 cup of extra confectioners sugar.

Easy Pumpkin Muffins

SO easy! It definitely sounded strange but I had faith and went with it. I used pumpkin with a spice cake mix and took them on a camping trip as a hearty breakfast cake or a sweet snack. Add nuts and they are even more hearty. Cream cheese frosting makes them like dessert.

World's Best Lasagna

I agree with the reviewer who said "Don't leave out the fennel, it's the key ingredient". I've made this many times now, often for a family get-together and it's always a hit! As a variation without lasagna noodles, I have sliced eggplant, breaded and pan-fried the eggplant and then used it as the "layering tool" instead of noodles. It adds to the work but is definitely worth it - plus it adds a vegetable.

Chimichurri Sauce

I was looking for low-carb/low-sugar sauces/marinades for meat and decided to try this as it fits the bill. DEEEElicious! I've used this as a "paste" to encrust pork chops and tenderloin, chicken and beef ribs. All were great. I even put a big spoonful in omelets & scrambled eggs. Try a spoonful in tuna salad instead of relish. Wow! Whatever you can imagine, you can put Chimichurri Sauce on it.

Mom's Best Peanut Brittle

Hubby and I don't care for Peanut Brittle but decided to try what I made for Christmas gifts anyway. Well...had to make a second batch because we ate it ALL! I've never made this before and thought it was very easy despite needing exact temps and timing. I'm sure you could put a variation on this but why mess with something when it's perfect the way it is?

Italian Breaded Pork Chops

I like recipes that are easy to remember - this one fits the bill. After the first time I made it, and enjoyed it, I can whip it up any time. Chops turn out wonderfully moist. I highly recommend this recipe.

Creamy Frosting

Thanks to Carol's recipe and Justme's tips this is my go-to frosting recipe - I wouldn't use anything else! It's light, creamy and not too sweet/sugary. Definitely a frosting you could eat with a spoon and not feel ill. I rushed the process once and got a "skin" on the top of my cooled milk/flour mixture which didn't blend in to the rest of the mixture and made it lumpy. My fault. Follow justme's tips and this will be your new favorite frosting, too!

Sam's Famous Carrot Cake

Truly the best carrot cake ever! Thank you for sharing this, it is my go-to carrot cake recipe. I first made this recipe as cupcakes baking them for 20 minutes. I filled the cupcakes with caramel filling and frosted with cream cheese frosting. SO RICH! The second time as a cake, two 9" rounds with Creamy Frosting by Carol on this site for a family reunion vacation. Everyone raved - especially the men who said it was a hearty cake, not too sweet and ate it for breakfast the next day. haha My husband doesn't like cream cheese frosting. The Creamy Frosting by Carol on this site works well with this cake if you like a frosting that isn't too sweet.
