Broiled Lemon and Garlic Tiger Prawns

Awesome! I did not have tiger prawns so it took a really long time to butterfly my large shrimp but I made the mixture with less margarine and more garlic. I marinated my shrimp in the mixture -laid them out and sprinkled them with a mixture of paprika, season salt and slap yo mama instead of the cheese. Me and my kids loved them and waited up to have me fix more. Served with mac and cheese and green beans and they were moaning like never before. For the adult palate my choice would be jasmine rice and asparagus sides. Delicious - cant wait to use the tiger prawns though.

Steak Marinade

I just tried this and I was missing a lot of ingrediants so I substituted. I used red wine, red wine vinegar, soy sauce, wirchestire sauce, italian dressing, minced garlic, mustard, and honey, syrup, sweet chili seasoning and catchup with water to sub for barbeque sauce with a bit of salt and slap yo mama peper seasoning. We will see how it turns out - it smells delightful. My marinade is only for 1 hour. I laid two rib eye steaks down in the mixture in my slowcooker on low and pierced them with a fork - flipping over and doing the same on both sides. Letting them marinade in the slow cooker on low should help speed up my process. Once ready - these will be pan fried in olive oil. Meanwhile my slowcooker will cook down the marinade to a sauce to serve up the steak with. I will strain the sauce so all the minced garlic will be gone and then add in some catchup for thickness if necessary. This should be awesome.

Buttermilk Pound Cake II

I made a smaller cake at 10 servings. I used 1 cup milk just shy of a full cup w/lemon juice to make it a full cup (when you are out of buttermilk this works just fine)and had a wonderfully tasty cake that the kids and I are more than happy with.

Cake Mixes from Scratch and Variations

Well, I had to try this recipe out w/some subs based on what I had in the house since things are tight. I used 1 egg but made up for it with a 1/3 cup mayonaise and 1 tablespoon flaxseed ground up. I always try to throw flaxseed into my breads and cakes so that the family is eating healthy despite themselves. I also used 1/2 margarine and 1/2 olive oil instead of the shortening. I used powdered sugar instead of granulated and I used sour cream instead of milk. I decided to try the chocolate version so I added some cocoa mix w/those mini marshmallows in it. The cake was beautiful and moist and fluffy but a bit on the bland side. I will try it again with a closer stance to the original ingrediants. Frosting: I used powdered sugar, sour cream, margarine and cocoa mix. Its the most creative I have ever been in the kitchen when things are tight.

Downeast Maine Pumpkin Bread

Determined to find something to make with pumpkin from one too many jack-o-lanterns that were purchased, I stumbled upon this great recipe that my kids and I love. I was out of some ingrediants and low on others so I substituted as follows: No ginger (used more cinnamon) No vanilla flavoring (used brandy) Used margarine instead of oil and ground Flaxseed for 2 of the eggs. I sprinkled powdered sugar on top and my children gobbled it all up.
