Gold Onion Soup

Don't rush this one! It is fantastic when it's simmered the full time. However, I tried it after only 10 minutes and it was so horrible I almost threw it away. Very glad I didn't because I loved it once the full time had passed.

Vegan Pancakes

I can't say enough nice things about these! I never have eggs or milk, but do get frequent pancake cravings :o) I prefer to add vanilla & cinnamon because that's how I like my pancakes. These don't spread at all, they only get tall! I used 1/4 measuring cup and got 7 small cakes.

Butter Bean Burgers

So in all honesty, I'd give the taste a 5 and the texture a 2. I doubled the recipe and tried frying 1/2 and baking 1/2... neither batch stayed together :( but the taste is awesome! I use fresh garlic and added fresh parsley. Yum! Since I can't get it to stay together as a burger I think I'll double and bake as a veggie meatloaf from now on. You really can use any bean, cheese, or binder and it will taste good.

Garlic Bread

Yummmmmm! I made this to eat with Brushetta 1 on this site, but it was so gooooood by itself too. I amped up the garlic and parsley because I can barely taste 3 cloves of garlic lol. Also, on one side I tried adding rosemary & oregano. I really liked the rosemary! And will be adding it to my garlic bread from now on.

Insanely Amazing Jalapeno Cheese Dip

Love this! Used fresh jalapenos and I made on the stove instead of baking (it's summer, who wants to use the oven?). Also, you can use whatever cheese combo sounds good and it will taste good!

Fried Green Tomatoes III

So good. This is an examle of how simple is sometimes perfect! Easiest recipe ever. I added a shake of red pepper flakes and cooked way longer than two minutes. I like them a dark golden brown.

Mandarin Orange Cake I

So amazing! Maded this for Mother's Day and everyone loved it. Even my brother who doesn't like sweets ate 2 slices! I added 1 extra can of mandarin oranges, drained, a splash of vanilla, and a splash of orange extract to the batter. I also drained the pineapple and mixed it with the pudding, then added the juice back until I liked the texture. Best cake I've had!

Glorified Hash Browns

Brunch was entirely off this site: Blueberry French Toast, Glorified Hashbrowns, Peach Praline Muffins, and Scrambled Egg Muffins. Yummy and super easy recipes! WE LOVED THESE POTATOES. By far, they were the favorite of the brunch. Didn't have the chive and onion cream cheese so I used plain cream cheese with maybe 1/2 cup of sliced green onion. Made the night before and popped in the oven this morning. Think they'd be just as yummy with pepper jack cheese and diced green chili or jalapeno too! Total comfort food!

Blueberry French Toast

Brunch was entirely off this site: Blueberry French Toast, Glorified Hashbrowns, Peach Praline Muffins, and Scrambled Egg Muffins. Yummy and super easy recipes! The sauce was amazing! Finished it with a squeeze of lemon. Will use it on waffles/pancakes/etc. I also think I'll use it with vodka and lemonade in the summer :o) BUT~ the french toast was blah. I rated 5 stars for potential: I'll make it again for sure, but with these modifications 2 1/2- 3 c blueberries, lots more cheam cheese (spread on bread before diced) and added to egg mix 2/3 c sugar, 3 tsp cin/nutmeg, and maybe 2 T vanilla. Then it would be perfect for me!

Holiday Brie en Croute

I've made this twice, the 1st time I left the rind on. The 2nd time I didn't, but put the chopped rind on the top and bottom of the brie. I liked it better like that. So much of the flavor is in the rind, but it melts so much better without it. Tastes fantastic though!

Tomatillo Soup

I love this soup!!! I will make this again and again, and I never do that. I rarely make the same meal once every 6 months, but I bet I will make this at least twice a month from now on! I did leave the chicken out and subbed a can of rinsed and drained black beans instead. Fantastic!

Black Bean Brownies

Yum! These are my new addiction! Two tips: 1) if they taste like beans you probably didn't rinse the beans enough. Rinse until the water runs clear (3 min?) 2). If the texture is "mouse like" they needed to be blended longer so the eggs whipped OR they needed to be cooked longer. I baked these in a muffin pan for 25 min. Perfect! Oh and I adjusted the cocoa, sugar, and vanilla up. I like strong flavors

Bananas Foster over Puff Pastry

Great! I misread the recipe and dumped everything, but the sour cream, in a pan. It all boiled together, but still tasted amazing. Would make just the banana sauce as an ice cream topper too. Yum!

Flourless Peanut Butter Cookies

"As is" I would rate these 3 stars, but I'm giving them 5 for several reasons. 1) they are the easiest cookies you will ever make. In less than 15 you have cookies! 2) the texture is perfect. 3) this could be the best starter recipe ever. They are missing something, but add vanilla/cinnamin, oats, M&Ms, chocolate chips or whatever else you like and you can't stop eating them. Mine needed to cook closer to 12 mins

Pakistani Spicy Chickpeas

My favorite recipe from this site so far! I only had canned tomatoes so I simmered the spices and tomatoes until they broke down. I doubled the spices and only used 1 can of beans to make it really saucy. I also added garlic, because I add garlic to everything :o)

Lentil Soup

I don't want to stop eating this even though I am stuffed! I doubled all the veggies and spices/vinegar, used a frozen box of spinach and it is amazing!!! FYI don't add the tomatoes until the end: using tomatoes, stock, or salt while cooking legumes makes them tough and takes longer to cook (only takes 35 minutes without salt). So I swirled a T of Better than Bullion in when I added the tomatoes. Fantastic recipe!

Ethiopian Cabbage Dish

Oh boy was this salty!!! I knew 1 tsp would probably be too much & wish I'd held off some. Other than that it is amazing! The other spices I amped up quite a bit. Will make this again & again with my own tweaks: way less salt, more cabbage & less potatoes, more onion, way less oil. I know that seems like a lot of changes, but I just think the oil & salt change healthy, yummy veggies into junk food :( thanks for sharing! Yum!

No Bake Cookies V

Love theses! I'd forgotten all about no bake cookies, I bet it's been 15 years since I've had them. Just like I remembered. I added 2 extra tbls of cocoa. Perfect! I over boiled a bit so my cookies weren't dropping by he spoonful... I rolled them and they turned out fine. Yum! So rich!!!

Marshmallow Popcorn Balls

Easiest recipe ever especially if you use microwave popcorn and melt the butter & marshmallows in a big microwave safe bowl. I used the holiday gingerbreadman marshmallows with a splash of vanilla and cinnamon. Perfect!
