Beets and Greens

My two favorite ways to describe dinner: cheap & easy! This was awesome! I didn't want to wait so long so I peeled & diced the beets then roasted them. I tossed in a few diced carrots and radishes too. The combination is great. Next time I think I'll add some whole garlic cloves too. Love it! You have to try beet greens!

Lentil Soup

I don't want to stop eating this even though I am stuffed! I doubled all the veggies and spices/vinegar, used a frozen box of spinach and it is amazing!!! FYI don't add the tomatoes until the end: using tomatoes, stock, or salt while cooking legumes makes them tough and takes longer to cook (only takes 35 minutes without salt). So I swirled a T of Better than Bullion in when I added the tomatoes. Fantastic recipe!

Holiday Brie en Croute

I've made this twice, the 1st time I left the rind on. The 2nd time I didn't, but put the chopped rind on the top and bottom of the brie. I liked it better like that. So much of the flavor is in the rind, but it melts so much better without it. Tastes fantastic though!

Brussels Sprouts and Barley Soup

So many of my favorite veggies & nutrient super stars are in this soup! I figured it would be tasty. However, the sodium content is alarming: over 1,100 miligrams per serving!!! Not cool! So I altered the cooking method to bring out more flavor sans sodium. I used frozen turnips with greens & added celery. I sauted onion, celery, carrots, and a bay leaf in a tsp of oil. Then added the other veggies and about 3 Tbls of roughly chopped garlic. Sauted a about 10 min. Then added 12 cups of water and 4 Tbls of Better than Boullion (which brought the sodium to over 2,400 miligrams for the whole pot, or 240 per serving). I cooked the barley on the side to save time and skipped the flour/butter to save calories and because I prefer a brothy soup. Hearty, filling, and, with a few modifications, healthy!

Mandarin Orange Cake I

So amazing! Maded this for Mother's Day and everyone loved it. Even my brother who doesn't like sweets ate 2 slices! I added 1 extra can of mandarin oranges, drained, a splash of vanilla, and a splash of orange extract to the batter. I also drained the pineapple and mixed it with the pudding, then added the juice back until I liked the texture. Best cake I've had!

Pakistani Spicy Chickpeas

My favorite recipe from this site so far! I only had canned tomatoes so I simmered the spices and tomatoes until they broke down. I doubled the spices and only used 1 can of beans to make it really saucy. I also added garlic, because I add garlic to everything :o)

Vegan Borscht

Outstanding! I adore this soup! The greens and swiss chard create an earthy taste I can't get enough of. Although, the way I made it probably doesn't count as "borscht." I didn't have dill and I didn't blend anything. Just boiled it up and crumbled medium tofu into it... lazy, but still tasty! But do let it boil at least an hour before adding the tofu. Also, used fresh tomatoes instead of canned ones.

Sarah's Banana Bread Muffins

Really easy! Kind of a Plain-Jane muffin though. I made some as is & some with vanilla, nutmeg, ginger, and topped with sugar. Those are much better. If you like a pure banana flavor you will love these. If you like a little sass I suggest adding additional flavoring. Also, in my oven I only needed to bake them 30 minutes @ 325.

The Best Red Enchilada Sauce

Absolutely amazing!!! I've probably drank 1/2 c just tasting it. I will never buy canned sauce again. I didn't even attempt toasting the peppers, I used maybe 1/4-1/2 c ancho powder instead. I also added cayenne to taste. Next time I'll add another clove or two of garlic. You really should try this sauce!

Glorified Hash Browns

Brunch was entirely off this site: Blueberry French Toast, Glorified Hashbrowns, Peach Praline Muffins, and Scrambled Egg Muffins. Yummy and super easy recipes! WE LOVED THESE POTATOES. By far, they were the favorite of the brunch. Didn't have the chive and onion cream cheese so I used plain cream cheese with maybe 1/2 cup of sliced green onion. Made the night before and popped in the oven this morning. Think they'd be just as yummy with pepper jack cheese and diced green chili or jalapeno too! Total comfort food!

Bananas Foster over Puff Pastry

Great! I misread the recipe and dumped everything, but the sour cream, in a pan. It all boiled together, but still tasted amazing. Would make just the banana sauce as an ice cream topper too. Yum!

Shrimp and Portobello Mushroom Fettuccine

Pretty good! And amazingly easy. But I didn't make it as written. I cooked the onions/mushrooms, then removed them, wiped out the pan (or sauce will be greyish brown), and then melted the butter and added the flour. Let it cook several minutes to cook out the flour taste,then added the garlic (extra!) and spices. Let it cook a few minutes, then melted in the cream cheese and slowly added the cream. Added the mushrooms/onions. Yum! Also~ I subbed spaghetti squash for pasta to make it a bit healthier.

Marshmallow Popcorn Balls

Easiest recipe ever especially if you use microwave popcorn and melt the butter & marshmallows in a big microwave safe bowl. I used the holiday gingerbreadman marshmallows with a splash of vanilla and cinnamon. Perfect!

Oma's Cottage Cheesecake

Wow~ this could easily be a 5 star recipe for me with minor changes. I made the cheesecake as written, but skipped the crust (not a fan or them!). It was really good. A little heavy on the flour for me though. It's soooo much cheaper to make than a real cheesecake! Next time I will double the recipe, but keep the flour & milk at these measurements and bake in a 9 springform pan. As written the texture is a little too airy, but I think reducing the milk & flour will fix that.

Special Banana Bread

Awesome! So much better than coffee shop or groccery store banana bread. The recipe my mom made was much more dense, but I really liked this lighter version too. I only did a 1/2 batch, I forgot to add the walnuts somehow, and only used 1/2 the cloves. It was still great. Perfect for fall! I couldn't find my loaf pan so I baked it in a greased angel food pan for 1 hr. Because it is so light, I might actually serve it as a cake with some lemon glaze.

Mrs. Fields Sugar Cookies

The easiest cookies ever! I realized I was out of vanilla 1/2 way into the recipe and substituted a tablespoon or two of fresh lemon juice and upped the sugar to compensate. Also, I can't make cookies without cinnamin so added a pinch. Really yummy! Used as a base for the Fancy Fruit Pizza on this site. And rolled with sugar, not flour

Cioccolata Calda (Hot Chocolate Italian-Style)

Like the inside of chocolate lava cake! Needs a bit more sugar and a splash of vanilla. Made mine in the microwave: once the milk/cocoa/sugar was warm added the cornstarch and cooked at 30 second intervals until pudding like.

Asparagus and Mushroom Frittata

Chocolate Ganache

Easiest recipe EVER! You can't screw it up & can do a million variations with it. White.chocolate subs really well, especially on devils food cake. It you chill the ganache you can also then beat it into a frosting. So delicious!
