Gold Onion Soup

Don't rush this one! It is fantastic when it's simmered the full time. However, I tried it after only 10 minutes and it was so horrible I almost threw it away. Very glad I didn't because I loved it once the full time had passed.

Baked Spaghetti Squash Lasagna Style

This was good, but not amazing. I loved the concept of layering the squash, but I didn't like the sauce. Normally I prefer chunky sauces but next time I'll use my own sauce recipe or run this one through the blender. I also doubled the garlic and added oregano.

Pumpkin Dip

Not as good as I was hoping for. Better after chilling overnight. If I make it again I'll probably double the cream cheese or halve the pumpkin to make it more creamy.

Pakistani Spicy Chickpeas

My favorite recipe from this site so far! I only had canned tomatoes so I simmered the spices and tomatoes until they broke down. I doubled the spices and only used 1 can of beans to make it really saucy. I also added garlic, because I add garlic to everything :o)

Flourless Peanut Butter Cookies

"As is" I would rate these 3 stars, but I'm giving them 5 for several reasons. 1) they are the easiest cookies you will ever make. In less than 15 you have cookies! 2) the texture is perfect. 3) this could be the best starter recipe ever. They are missing something, but add vanilla/cinnamin, oats, M&Ms, chocolate chips or whatever else you like and you can't stop eating them. Mine needed to cook closer to 12 mins

Shrimp and Portobello Mushroom Fettuccine

Pretty good! And amazingly easy. But I didn't make it as written. I cooked the onions/mushrooms, then removed them, wiped out the pan (or sauce will be greyish brown), and then melted the butter and added the flour. Let it cook several minutes to cook out the flour taste,then added the garlic (extra!) and spices. Let it cook a few minutes, then melted in the cream cheese and slowly added the cream. Added the mushrooms/onions. Yum! Also~ I subbed spaghetti squash for pasta to make it a bit healthier.

The Best Red Enchilada Sauce

Absolutely amazing!!! I've probably drank 1/2 c just tasting it. I will never buy canned sauce again. I didn't even attempt toasting the peppers, I used maybe 1/4-1/2 c ancho powder instead. I also added cayenne to taste. Next time I'll add another clove or two of garlic. You really should try this sauce!

Cream of Broccoli Soup IV

Amazing! I didn't have broth so I used the water I steamed the broccoli with. So light and fresh: this is NOT the pudding like lump of fat & salt you get from a can or a restaurant. It's delicious! Can't wait to try it with asparagus too. ***tip*** Some have complained it's lumpy: make it like gravy. Once the flour/butter browns, SLOWLY add the milk/broth and whisk like crazy. I add 1/3 c. liquid at a time. Probably takes 4-5 min total. Never had lumpy gravy, sauce, or soup.

Bananas Foster over Puff Pastry

Great! I misread the recipe and dumped everything, but the sour cream, in a pan. It all boiled together, but still tasted amazing. Would make just the banana sauce as an ice cream topper too. Yum!

Black Bean Brownies

Yum! These are my new addiction! Two tips: 1) if they taste like beans you probably didn't rinse the beans enough. Rinse until the water runs clear (3 min?) 2). If the texture is "mouse like" they needed to be blended longer so the eggs whipped OR they needed to be cooked longer. I baked these in a muffin pan for 25 min. Perfect! Oh and I adjusted the cocoa, sugar, and vanilla up. I like strong flavors

I love asparagus and eggs. Very basic and easy recipe you can customize however you like and with whatever you have on hand. I added red and yellow peppers and left out the cheese

Cioccolata Calda (Hot Chocolate Italian-Style)

Like the inside of chocolate lava cake! Needs a bit more sugar and a splash of vanilla. Made mine in the microwave: once the milk/cocoa/sugar was warm added the cornstarch and cooked at 30 second intervals until pudding like.

Tomatillo Soup

I love this soup!!! I will make this again and again, and I never do that. I rarely make the same meal once every 6 months, but I bet I will make this at least twice a month from now on! I did leave the chicken out and subbed a can of rinsed and drained black beans instead. Fantastic!

Curried Carrot Soup

This was good, but I think if I make it again I'll go with other reviewers and add coconut milk. Super easy and cheap though. I halved a bag of baby carrots. For the curry I used the $1.99 packet from Cost Plus. Love those for spices I can't use before they get stale.

Holiday Brie en Croute

I've made this twice, the 1st time I left the rind on. The 2nd time I didn't, but put the chopped rind on the top and bottom of the brie. I liked it better like that. So much of the flavor is in the rind, but it melts so much better without it. Tastes fantastic though!

Blueberry French Toast

Brunch was entirely off this site: Blueberry French Toast, Glorified Hashbrowns, Peach Praline Muffins, and Scrambled Egg Muffins. Yummy and super easy recipes! The sauce was amazing! Finished it with a squeeze of lemon. Will use it on waffles/pancakes/etc. I also think I'll use it with vodka and lemonade in the summer :o) BUT~ the french toast was blah. I rated 5 stars for potential: I'll make it again for sure, but with these modifications 2 1/2- 3 c blueberries, lots more cheam cheese (spread on bread before diced) and added to egg mix 2/3 c sugar, 3 tsp cin/nutmeg, and maybe 2 T vanilla. Then it would be perfect for me!

Peach Praline Muffins

Brunch was entirely off this site: Blueberry French Toast, Glorified Hashbrowns, Peach Praline Muffins, and Scrambled Egg Muffins. Yummy and super easy recipes! Everyone really liked these muffins. I thought they were good, but could be better. Next time I'll puree some peaches and sub them for the oil. Also I think they needed cinnamon and maybe another cup of peaches. But it is a keeper recipe!

Glorified Hash Browns

Brunch was entirely off this site: Blueberry French Toast, Glorified Hashbrowns, Peach Praline Muffins, and Scrambled Egg Muffins. Yummy and super easy recipes! WE LOVED THESE POTATOES. By far, they were the favorite of the brunch. Didn't have the chive and onion cream cheese so I used plain cream cheese with maybe 1/2 cup of sliced green onion. Made the night before and popped in the oven this morning. Think they'd be just as yummy with pepper jack cheese and diced green chili or jalapeno too! Total comfort food!

Scrambled Egg Muffins

The scrambled egg muffins were a split decision: I love all eggs, any way possible and only thought they were okay. My mom is picky about eggs, but loved these. Weird! That said I like how easy and portable they are. And I adore that they are portioned out. I left out the sausage and added 2/3 c milk and they were very moist. I think these would be fun to serve "make your own" style with a topping bar set out, perfect for a little one's slumber party!
