Giant Chocolate Chip Cookie

If you have chocolate chips at home you have this recipe...but I didn't have the bag so I'm glad someone posted it! It's the same cookies we all grew up with. However, tonight I made some changes which resulted in a less than stellar cookie. So learn from my mistake: don't use all white sugar unless you want a super crispy cookie, add extra dough to the edges if using a huge cookie sheet instead of a smaller pan, and make something else if you don't have chocolate chips because a walnut cookie isn't as yummy as it sounds! Also, I think 375 is a tad too high. I reduced the serving to 4 and the recipe does scale down well.

Zucchini Patties

To me a 3 is slightly below average... I didn't hate them, but I didn't love them. The only change I made was using Italian bread crumbs instead of the flour which should have only made them more tasty. They were just very plain and bland. I like the concept so I might tinker and add some garlic and jalapeno. Maybe some parsley or basil? Something...anything...

Vegetarian Kale Soup

I'm glad I like this because it makes an insane amount of food! You could easily feed 10 or more. I did use chard instead of kale and I could see how kale would be way better.watch your boullion cubes though, I believe (and I very much could be wrong) the author meant to use the cubes with the ratio 1 cube to one cup of water. The stores here only carry the ones that are good for 2 cups of water. It could be very salty to use the full amount of cubes.

Special Banana Bread

Awesome! So much better than coffee shop or groccery store banana bread. The recipe my mom made was much more dense, but I really liked this lighter version too. I only did a 1/2 batch, I forgot to add the walnuts somehow, and only used 1/2 the cloves. It was still great. Perfect for fall! I couldn't find my loaf pan so I baked it in a greased angel food pan for 1 hr. Because it is so light, I might actually serve it as a cake with some lemon glaze.

Vegan Borscht

Outstanding! I adore this soup! The greens and swiss chard create an earthy taste I can't get enough of. Although, the way I made it probably doesn't count as "borscht." I didn't have dill and I didn't blend anything. Just boiled it up and crumbled medium tofu into it... lazy, but still tasty! But do let it boil at least an hour before adding the tofu. Also, used fresh tomatoes instead of canned ones.

Squash and Zucchini Burritos

This was yummy! I didn't bother baking these, just microwaved the tortillas. I found it under spiced. I ended up using twice the garlic, cumin, and red pepper. Next time I'll serve with lime and sour cream too.

Lemon Zucchini Bars

Maybe I did something wrong :( but I didn't like these. The taste was fine, but the texture was horrible! I have tons of zucchini so I might try again, but with more flour and less baking soda. I like a firmer, more cake like bar. These were too "airy" even for a lemon bar!

Fresh Tomato Basil Sauce

I think this tastes like Prego or something you'd get at Olive Garden... which isn't really a compliment to me because I can cook better than that. But it has real potential and is a great way to use up garden tomatoes. Sometimes simple is better, but this is just missing something. But it's not bad.

Vegan Pancakes

I can't say enough nice things about these! I never have eggs or milk, but do get frequent pancake cravings :o) I prefer to add vanilla & cinnamon because that's how I like my pancakes. These don't spread at all, they only get tall! I used 1/4 measuring cup and got 7 small cakes.

Butter Bean Burgers

So in all honesty, I'd give the taste a 5 and the texture a 2. I doubled the recipe and tried frying 1/2 and baking 1/2... neither batch stayed together :( but the taste is awesome! I use fresh garlic and added fresh parsley. Yum! Since I can't get it to stay together as a burger I think I'll double and bake as a veggie meatloaf from now on. You really can use any bean, cheese, or binder and it will taste good.

I like these, not too sweet and a little unexpected. I think I'll add a pinch more nutmeg next time. I don't think most kids would like these... or picky adults :o) but they are really good!

Garlic Bread

Yummmmmm! I made this to eat with Brushetta 1 on this site, but it was so gooooood by itself too. I amped up the garlic and parsley because I can barely taste 3 cloves of garlic lol. Also, on one side I tried adding rosemary & oregano. I really liked the rosemary! And will be adding it to my garlic bread from now on.

Bruschetta I

Liked this a lot! Other than the oil, made this entirely from my garden :o) I added 1/2 a small white onion because the chives weren't quite strong enough for my taste. My tomatoes were VERY juicy, next time I will strain the tomatoes and only add a little of the juice back.

Insanely Amazing Jalapeno Cheese Dip

Love this! Used fresh jalapenos and I made on the stove instead of baking (it's summer, who wants to use the oven?). Also, you can use whatever cheese combo sounds good and it will taste good!

Vegetarian Korma

This was not awesome. Edible, but only with major additions... I would probably have tossed it without adding garam masala, cinnamin, tumeric, more ginger, apinch of sugar, and way more heat! It could have been my curry powder though, some blends are better than others. I'll keep looking for my "go to" curry recipe. Hope you like it more than me! It does smell amazing as it cooks though.

Maple Pancakes

Okay~ so these pancakes are yummy & I will make them again, but the maple flavor is nonexistant. I love that they don't have lots of sugar and the maple syrup gives a crunchy edge to the pancakes. But the title is misleading. I used a good syrup too, none of that Mrs. Buttersworth . As pancakes go I loved them, but for my taste buds I need at least double the syrup before they'd be "maple" pancakes!!

Fast and Easy Pancakes

So normally other reviewers really give great advice so I listened with these and reduced the sugar. Mistake! Stick with the original amount! They need it. Didn't have regular milk or vanilla so subbed vanilla soy milk and tasted great. You need a big grill: the first few had a better texture than the last few. Batter does not rest well. But overall, a great pancake!

Roasted Brussels Sprouts

A great way to do brussels sprouts! Make sure they get really dark brown. The best ones didn't have any green left on the outside. To make it more of a meal I also added whole garlic cloves and green beans. When I had about 20 minutes left I added cherry tomatoes and put some cod in too. A simple and yummy dinner!

Lower Fat Fudge Brownies

Pretty good. I agree with other reviewers: the texture is a bit strange. But the taste is decent. I like that there is no oil/butter so the fat/calories are less than a typical brownie. I'll make these for me, but wouldn't bring them to a bbq or anything.
