Easy Decadent Truffles

Ridiculously easy! But very time consuming!! I made one batch and split into different variations. My favorite was white chocolate chips with orange extract dipped in dark chocolate. I tried to make as written, but was too messy and time consuming. So after a few, I stuck the bowl back in the fridge and refrigerated for 20 minutes then I dropped spoonfuls onto waxed paper and froze for an hour. Then rolled into balls. So much easier!!

Swiss Chard Sauteed with Lime

A little bland. I still like lemon better with chard. Would make again with some garlic, onion, and lemon with the lime.

(Gluten Free) Magic Cookie Bars

Sticky, but delicious. I think a lot of gluten free stuff is good for being gluten free, but not by "normal" standards. But this is yummy by all standards :)

Blue Cheese Coleslaw

Salsa Chicken Burrito Filling

Put everything in a little crock pot for 3 hours and it was good, but very plain Jane. The picky (meat and potatoes) boyfriend loved it. I tend to like a little more flavorfull food and only liked it. Would make it again because it is a good compromise for rather differently eaters, not because it was so delicious. I think it would be better with more garlic, chili powder, and maybe a little chipotle or ancho powder.

Sausage Biscuits and Gravy

I'm not a huge biscuit and gravy fan, but made still really liked this. Good consistency. Made for someone who LOVES biscuits and gravy and he only seemed lukewarm on this.

Best Chocolate Chip Cookies

These totally did not work. I came out with flat and fearless cookies. Followed recipe exactly and had new baking soda. Maybe it is an altitude thing? Super disappointing :(

Tasty Lentil Tacos

Good, but salty. I suggest skipping the broth because the taco seasoning has plenty of salt. I added a squeeze of lime, hot sauce, and put avocado in the shells. Didn't wow, but is a nice change from the black bean tacos I normally make.

Vegan Split Pea Soup II

I quadrupled the curry and used the full amount of salt (usually I use half the salt when I cook). But it is cheap, easy, and filling. The leftovers are better than the first night.

Cheesy Broccoli Quinoa

Quite good, but a little too cheesy. Next time I will cut the cheddar in half. But overall this is a great dish! I tried a little cajun seasoning on it too and that was amazing!

Beans, Greens and Garlic Soup

Fantastic! I did add extra garlic and used 6 tsp of Better than Bullion No Chicken Base to 7 c. of water instead of broth. Simple and perfect as is. Because it is so simple I would suggest not using frozen spinach or a generic broth. Great comfort food.

Lentil Soup

I don't want to stop eating this even though I am stuffed! I doubled all the veggies and spices/vinegar, used a frozen box of spinach and it is amazing!!! FYI don't add the tomatoes until the end: using tomatoes, stock, or salt while cooking legumes makes them tough and takes longer to cook (only takes 35 minutes without salt). So I swirled a T of Better than Bullion in when I added the tomatoes. Fantastic recipe!

Pico de Gallo

Any fresh pico is still better than salsa from a jar, but this is not the best pico de gallo recipe. The ratio of tomatoes to other ingredients is too high. I ended up adding the whole onion and jalapeno and additional cilantro. Also the garlic powder and cumin made this taste stale so I did have to add additional lime juice to brighten it back up.

Swedish Sticky Chocolate Cake (Kladdkaka)

Great! Careful though, I didn't hear the alarm and over cooked it by about 4 minutes and so lost all of the gooey middle. Cracks me up that a lot of the bad reviews for this are by people who didn't realize it should be like a chocolate lava cake: its supposed to be gooey in the middle ;-) next time I will cut back on the sugar though. It is VERY sweet. Super easy and so good for chocolate cravings!

Green Bean Curry

Pretty tasty! I only had frozen green beans mixed with waxed beans and carrots, but the extra veggies only made this more delicious. I do like a sweet spicy curry so I added a tablespoon of brown sugar. The lime juice is amazing! I never knew that was what was missing in past curry recipes. I did adjust spices slightly to my preferences and used the whole can of coconut milk for extra sauce (and I thought it was grainy with only a 1/2 c). Next time I will add cube tofu.

Coconut Curry Tofu

This recipe had such high reviews that I was super excited to try it, but this was a fail for me... If you make it I suggest the following (which I didn't do, but wish I had) 1) stir fry the veggies and spices in one pan 2) bring the wet ingredients to a boil in another pan with a little corn starch to thicken the sauce 3) double or triple the ginger and brown sugar 4) use less than half of the soy sauce and leave out the salt. I also wrapped the tofu in paper towels and placed a weight on top of that for 1 hour to firm it up a bit

No Fry Crab Rangoon

Crab Rangoon is one of my favorite foods and I think this recipe is almost as good as my favorite restaurant. The filling is really,really yummy!!! I did add a dash of soy sauce. I will never make this recipe again though... I hate making wontons! Worst cooking task EVER! I love the chef at my local place even more having made them myself! I ended up folding them into rectangles and it was somewhat easier. I wouldn't bake them again either. The texture wasn't the best even trying all of the tips from other reviewers. They need some grease :-) I still have half a batch of filling and will just heat it and use it as a dip because I never want to fill a wrapper again! But if you are patient and can make 48 you should because the flavor is fantastic!

Sweet and Sour Dipping Sauce

So much better than the jarred junk! I did find it a pinch too sweet so I added soy sauce to taste. Also- always thought you had to boil corn starch to make it thicken? Could be wrong though ;-) but I boiled mine for a few minutes and it came out the perfect consistency. I subbed rice vinegar too. Great as is and with a splash of sirracha when you would like a little heat.
