Broiled Tilapia Parmesan

If I could give this more than 5 stars I would. I hate the taste of fish, but gladly ate seconds. Even my picky children asked for more. My seafood eating husband is excited that fish will be on the menu more often - thanks to this recipe.

Cranberry Orange Cookies

Love this recipe. I substitute pecans for the walnuts. Worth the extra effort required. They look and taste very gourmet. I look forward to making them every Christmas.

Praline Sweet Potatoes

We LOVE this recipe, but I have to cook it much longer stated to get it completely cooked. I've made it several times and we are always waiting for it to come out of the oven before we can eat - once we had it the next meal because it was so undercooked. I will continue to make this because the taste is so good!

Fried Mozzarella Cheese Sticks

These are tasty and gone in a flash. I didn't have italian bread crumbs, but just added some italian seasons to them. I also used another suggestion and mixed the flour with the bread crumbs. I highly recommend getting all the sticks ready before starting the frying process.

Basic Crepes

very easy and tasty! I had a little trouble with lumps, but I got most of them worked out (they didn't effect the taste!) I also used a small amount of butter to the pan before each crepe. YUM YUM. We stuffed ours with vanilla yogurt and fresh strawberries and bananas and enjoyed a decadent breakfast.

Shrimp Scampi Bake

I am not a huge shrimp fan, but my family is. They loved this quick recipe. I probably tripled the amount of garlic and lemon juice in the sauce and served it over bow tie pasta with an equal amount of broccoli and baby carrots that I cut lengthwise. I also sprinkled the finished product with Parmesan cheese. The smell of dijon mustard was pretty strong while it was cooking, but was surprisingly mild in the finished product. I will definately make this recipe again. And I almost always have the ingredients on hand.

Amazing Pork Tenderloin in the Slow Cooker

Really good! I use a large pork loin roast and double the sauce, put it in the crock pot(I Have an extra large crock pot) with red potatoes, carrots and celery (no onions because of the soup mix). I have made this many times. If you use store brand onion soup mix it is VERY SALTY, But if you use name brand soup mix it is NOT TOO Salty. Juice is awesome as gravy over the veggies! Makes great leftovers.

Simply the Easiest Beef Brisket

Extremely easy! My family loved it. I didn't realize I was out of onions, so I used a little onion powder in the sauce. It wasn't quite what I was looking for, but it was pretty good and very moist. (I would give it 4 stars, but I was out-voted 4-1 by the rest of my family).

Kalua Pig in a Slow Cooker

This was awesome and so so easy! I used a pork loin (what I had in the freezer). It's not as fatty as the recommended roast, so I imagine it didn't have as much juice, but was very tasty. Everyone in my family ate it WITHOUT adding any bbq sauce. (Unheard of in this home!) I make this all the time with Cole Slaw. It goes perfectly with the salt fo the meat.

Arti-Cheesy Chicken

I cooked the chicken in chicken broth and then used a little of that for the mushrooms instead of bacon grease. I doubled the chicken to 2 whole breasts, but didn't use quite as much mushrooms (I didn't read the recipe amt before I went to the store). I added the garlic to the end of the mushrooms cooking time. I substituted whole milk for the cream. I left out the olives. I didn't add any salt or pepper. I think adding 8 ounces of feta would be ok - the size of unflavored feta. It melts in and not overly feta tasting. (I will do this next time). Recipe suggests serving over penne pasta- it was saucy enough I dumped pasta into casserole. If you have leftovers, may need to add a little more milk or soup. (Other than that, I followed the recipe EXACTLY!) :) Recipe has a wonderful bacon flavor as a leftover.
