Easy Homemade Vanilla Ice Cream

Reviewed: Jul. 28, 2011
VERY easy and my guests were impressed, but the flavor wasn't quite the traditional homemade ice cream flavor I was hoping for. This would be good with some fresh fruit added before mixing.

Mother's Applesauce Muffins

Reviewed: Jul. 28, 2011
I took some other's advise and used 2 C white flour, 1 C wheat flour and 1 C oatmeal in place of the 4 C flour. Made no other changes. Muffins were very dark from all the cinnamon so I was afraid appearance would deter my family from eating them, but they loved them. May use a chunky appleasauce next time or add a little fresh apple. The apple flavor was a little lost with all the cinnamon, but still very yummy!

Frank's® Red Hot® Buffalo Chicken Dip

Reviewed: Feb. 11, 2010
VERY TASTY! I used mozzarella and crumbled blue cheese both. I used chicken breast instead of canned. I used a local company's (Cookies Brand) Wings and Things Sauce. It wasn't as spicy as I expected, but extremely good! I imagine using Frank's would make it have a little more kick, but just assuming. I will definately make this agin!

Peanut Butter Balls IV

Reviewed: Feb. 9, 2010
These were good. I thought they were a little dry and I had a hard time pressing the balls together. The chocolate was very melty when using your fingers to eat them. Next time I think I will use choc almond bark instead and maybe a little less powdered sugar. Still they were good, not awesome, but good.

Baked Dijon Salmon

Reviewed: Jan. 31, 2010
I skipped the bread crumbs and just used ground pecans for the crumb mixture like others have suggested. I also didn't have any dijon mustard so I used coarse ground mustard instead. This was exceptionally good! It was loved by my husband and my 3 children aged 11,5, and 2. AND I do not care for much seafood and I loved it too! This is an awesome way to get fish into our diet. FYI - I have fixed this several times and always have to cook it longer than recommended.

Baked Teriyaki Chicken

Reviewed: Sep. 18, 2009
Love it! I've made it twice. Once on the stove top and once in the oven. I doubled the sauce so there would be plenty to spoon over the brown rice! It is the perfect - not too sweet or tangy sauce.

Cherry Tomato Salad

Reviewed: Sep. 18, 2009
We LOVE this recipe. I do usually make a few changes however. I use balsamic vinegar instead of red wine vinegar, basil in place of oregano, and sunflower seeds instead of pine nuts. I have added diced cucumbers, but they seem to get a little lost in the mix. Anyway I fix it, it is always a hit! Thanks for the recipe.

Mushroom Blue Cheese Turkey Burgers

Reviewed: Sep. 17, 2008
WOW! AWESOME! I doubled the recipe, mixed 5 oz blue cheese into patties, and omitted salt. I was able to make 10 large patties. Can't wait to have them again!!! **Have made these lots and they are always a favorite!. My kids like feta better so I have substituted that and they are also yummy!

Olive Chicken II

Reviewed: Aug. 18, 2008
I Love this recipe and have made it many times. My kids (5 and 7) requested this dish while recovering from tonsillectomies. I have started making just a few slight modifications, but stay true to the heart of this recipe. I usually use boneless skinless chicken thighs. In the off season I substitute canned Italian seasoned tomatoes for the fresh tomatoes and the thyme. And I ALWAYS double the sauce (except the olives) so that I can add cooked angel hair pasta just before serving. Trick is to simmer it on low until all the flavors have blended. Definitely a restaurant quality meal!!

Spicy BBQ Chicken

Reviewed: Jul. 8, 2008
This is very similar to my standard bbq sauce. I omit oil and add about 1 - 1 1/2 tsp of celery seed (and usually double the recipe.) I mix sauce all together and cover cut up chicken, ribs etc and bake in oven or crock pot. The extra cooked sauce is really good on top of mashed potatoes and my kids LOVE extra onions in this sauce - and they normally pick out the onions.

Fruit Salad in Seconds

Reviewed: Feb. 29, 2008
Very good and easily adaptable to whatever you have on hand! I used a large container of Strawberries, quartered with a smidge of sugar; an equal amount of red and green grapes combined; a small amount of blueberries; I used a small can of tidbit pineapples, drained; I soaked the banana slices in the pineapple juice

Blue Bacon Stuffed Mushrooms

Reviewed: Feb. 29, 2008
I thought these were phenomenal! I forgot to take the bacon out of the freezer, so I left it out. So these can very easily be adapted for non-bacon eaters. I can't wait to make them again WITH bacon. Bacon, Bleu cheese, mushrooms...mmmmm, makes me drool just thinking about these warm creamy bites of heaven. *** I made these with bacon and was disappointed, not much change in flavor. Don't get me wrong, they are still wonderful, but not really the bacon flavor I was hoping for.***

Broiled Tilapia Parmesan

Reviewed: Feb. 29, 2008
If I could give this more than 5 stars I would. I hate the taste of fish, but gladly ate seconds. Even my picky children asked for more. My seafood eating husband is excited that fish will be on the menu more often - thanks to this recipe.
