Sweet Potato Pecan Pie

This recipe is so awesome. Delicious. I made as a pie the first time. The second time, I tripled the recipe, left out the pie crust & cooked it in a 8x12 glass dish. It came out wonderful. Also, the first time I strained the sweet potatoes through a screen to get out all lumps. It was a pain. I did not do this for the casserole dish & it was just as good. No need to strain. I mixed everything with my kitchen Aid and it came out nice & smooth. I also subsituted the cloves for freshly grated nutmeg.

Brazilian Lemonade

I modified his recipe to make a refreshing yet decadent looking Holiday Martini. I took out one cup of water & instead added 1 cup of good quality vodka. After straining I then poured it over ice in a martini shaker. Shook, poured into an iced martini glass. Garnished with a sprig of mint & sprinkled a little red & green sugar. Awesome. It looked rich & decadent but tasted light and refreshing! Watch out though! They taste good & go down easy. LOL.

English Trifle to Die For

This is a delicious trifle. However, you need to triple the custard portion and double the whipped cream. I also doubled the raspberries. There is def. not enough custard or cream to cover the cake.

Sweet Potato Pecan Pie by EAGLE BRAND®

Leave out the orange zest and this would be a 5 Star Pie. The orange zest overpowers everything and you lose the taste of the sweet potatoes. The consistency and topping are excellent.

French Pastry Pie Crust

This is not the crust for the novice piemaker. I am a novice. I followed the directions to the t. taking in mind all the tips for making a pie crust. It was so crumbly. Not easy to work with. Very salty too.
