Cranberry Salad II

I loved this recipe and will make it for future Thanksgiving feasts. This is how I adjusted it: I used 2 clementines in place of the orange (that was all I had). I used 3/4 of a fuji apple in place of the celery and walnuts. I used 3/4 c. sugar and cranberry gelatin (I am not sure you would need any extra sugar at all. I will experiment). I shared some of this with a bachelor friend who REALLY liked it. My children weren't crazy about it. Now I get to eat it ALL. Yum.

Monkey Bread V

I like monkey bread but not this recipe. I would change it to rolling the bolls in melted butter first, then the cinnamon/sugar mix. And then pour the remainder of the mix on top with no added extra white sugar. This recipe was both too sweet and too buttery.

Cream of Broccoli Soup III

I used this recipe as a guide, because I needed to make my soup bigger for a big family, and adjust it for taste and ingredients on hand. My soup turned out so good all 5 of my older children ate it right up! I prefer smaller pieces of carrot so I shredded them (I used about 4 small) and then began sauteeing them in 1/4 c. butter while I chopped the (green) onion, garlic, and celery. After adding them, I poured in 4 c. potato water (reserved from the day before cause I hate wasting vegetable water!) and then added 1 TBSP chicken buillion. Added 3 small potatoes diced small along with about 6 c. chopped broccoli (including stem) and let it simmer for 20 minutes. I did not puree--just made sure everything was chopped tiny. I used 3/4 c. cream, 2 c. half/half, 1 1/4 c 2% milk. Heated that slowly and threw in a couple handfuls of shredded cheese. I sprinkled seasoned salt and black pepper lightly over top then stirred it all up. Even my pickiest eaters loved it. I have found THE recipe I needed. Thanks!

Thanksgiving Corn Casserole

For those of us in this house who like onion/green pepper, this was a fabulous dish! The flavor and texture are wonderful, especially the crispy edges! Not having creamed corn, I pureed a can of whole corn, drained, and I doubt it made much flavor/texture difference. I will be making this dish again.

got an enthusiastic thumbs up from my kids who ate them 5 minutes out of the oven. The only change I made was using regular salt instead of kosher. This was super easy and quick to make and with 6 kids hungry all the time, it will be nice to make these in about 30 minutes.

Caramel Banana Cake Roll

I hardly know how to do a recipe EXACTLY how it says, because I always have to adjust according to the ingredients I actually have--and to taste. The changes I made were fairly irrelevant: doubled the banana and did not use the lemon peel (didn't have any). Used about a 1/4 tsp cinnamon instead. For filling, I doubled cream cheese instead of using cr. cheese+cool whip. I got some raves on it and loved it myself, even when I am no keen fan of banana anything.

Beef Egg Rolls

This has become a favorite in my family. The first time I made it I made it close as I could to "as written" and it was fabulous. Since then, I follow it "loosely" (tonight I didn't have sherry but I did have cooking red wine so I used that) and we enjoy it with whatever ingredients I have on hand. Highly recommend!

Oven Fried Chicken III

I skipped the thyme but used all the other seasonings. My children don't think I can make good fried chicken, but they loved this recipe! I never buy mayo but had Miracle Whip so I dumped about a cup in a big pan, whisked it with milk to a less "gloppy" consistency, then coated each piece of chicken. I let them "marinate" like that in the same pan for about an hour. I then rolled them in the seasoned breadcrumbs and baked for 1 hr 20 min @375. The coating was crispy & delicious and the chicken was juicy and moist. I will be relying on this recipe for the future. (I made 9lbs of chicken pieces so I tripled the recipe for crumbs, salt & paprika but only doubled the garlic and black pepper. For the garlic powder I used 1 tsp garlic powder & 1 tsp onion powder since I prefer the milder flavor of onion.)

Roast Sticky Chicken-Rotisserie Style

I have made this several times and it tastes simply fantastic. The first time I made it I didn't have thyme so I subbed rosemary. It was great. Later I bought thyme just to make this recipe, but even though I did try it, I liked the rosemary better. This works for me without being dry. My 6 children stand around snitching bites while I cut this up. This recipe is a total winner at my house!
