About this Cook
I'm a mother of 5 under age 8. I come from a family of 9 and began cooking when I was 11. I love music (I play organ and handbells) and making a house into a home and my family into a loving unit. If I could cook without washing dishes and garden all day instead of keeping the house in order, my life would be a dream!
My favorite things to cook
I love to bake things--bread, cookies, cakes. I don't have the time, usually to do fancy things. I have also learned how to create delicious meals without dairy products for my husband who is deathly allergic to milk. I like the compliments I get on my dairy-free version of green bean casserole.
My favorite family cooking traditions
Having the children choose a favorite meal and fixing it for their birthday.
My cooking triumphs
Learning to estimate amounts in recipes because of an experienced eye! Just about every one of my successful (compliment inducing) dishes has been from a taste of home magazine or cookbook.
My cooking tragedies
A HUGE batch of spanish rice for filling green peppers--I thought I turned it off on the stove and went to get ready for church. We managed to not waste the smoke flavored concoction but it wasn't easy even for us adults!

Roast Sticky Chicken-Rotisserie Style
I have made this several times and it tastes simply fantastic. The first time I made it I didn't have thyme so I subbed rosemary. It was great. Later I bought thyme just to make this recipe, but even though I did try it, I liked the rosemary better. This works for me without being dry. My 6 children stand around snitching bites while I cut this up. This recipe is a total winner at my house!

Oven Fried Chicken III
I skipped the thyme but used all the other seasonings. My children don't think I can make good fried chicken, but they loved this recipe! I never buy mayo but had Miracle Whip so I dumped about a cup in a big pan, whisked it with milk to a less "gloppy" consistency, then coated each piece of chicken. I let them "marinate" like that in the same pan for about an hour. I then rolled them in the seasoned breadcrumbs and baked for 1 hr 20 min @375. The coating was crispy & delicious and the chicken was juicy and moist. I will be relying on this recipe for the future. (I made 9lbs of chicken pieces so I tripled the recipe for crumbs, salt & paprika but only doubled the garlic and black pepper. For the garlic powder I used 1 tsp garlic powder & 1 tsp onion powder since I prefer the milder flavor of onion.)

Beef Egg Rolls
This has become a favorite in my family. The first time I made it I made it close as I could to "as written" and it was fabulous. Since then, I follow it "loosely" (tonight I didn't have sherry but I did have cooking red wine so I used that) and we enjoy it with whatever ingredients I have on hand. Highly recommend!
