Irish Bannock

I made this as an "Irish soda bread" for St. Patrick's day and everyone loved it. It was moister and less crumbly than many of the other recipes I have tried. I measured the flour by the dip-level-pour method and used all the buttermilk, but was able to knead it without too much sticking (not kneading will affect the texture). I used golden raisins instead of currants because I like them better, and I have only been able to find currants at Trader Joe's ever.

Karen's Fried Green Tomatoes

I made this exactly as the recipe says and it was excellent. Some of the tomato slices needed a little salt at the table, depending on how well the original seasoning stuck to it.

Serbian Ground Beef, Veggie, and Potato Bake

It's hard to find a new recipe that works well with my son's food allergies as he is sensitive to many spices as well as egg, soy, and possibly dairy. I put an additional layer of potatoes in the middle as recommended, and dropped out the half and half (due to the allergies). It was really good! Everyone in the family liked it.

Plain Egg Less Cake

Great tasting cake, good for those with egg allergies. I made a glaze with some orange juice, triple sec, butter, and sugar and put that on it to emphasize the orange flavor, and it was really good that way!

Golden Chili Chicken

I made this pretty much without tweaking. The chicken was perfectly cooked, moist and tender. The sauce was pleasant but had a very mild flavor--there is no "pop" to the flavor although you would think with orange juice and chili you'd get something zesty. My husband found it bland. I kind of liked it in more of a comfort food way.

Pork Tenderloin with Dijon Marsala Sauce

Grandma's Corn Pudding

This is a great recipe. I made it once for Thanksgiving and now my family asks me to make it every year! One way to make it even easier is to combine the cold milk and the cornstarch and stir out the lumps before adding to the egg mixture. This saves about 5 minutes of whisking. Other than that I make the recipe completely unaltered.
