Morning Glory Muffins I

These are very good. Made the applesauce substitution like everyone else. Used an extra egg in place of the whites. Used 1/2 white whole wheat flour and 1/2 whole wheat pastry flour. Cut the sugar to 3/4 cup because with all the other sweet elements, 1 1/4 cups seemed way over the top. Shredded carrots, apples and nuts in the food processor for ease. Baked 25 minutes. Came out great. I was tempted to add milk because I worried they would be dry but didn't and they're not. Plenty sweet,too. Will be great toasted too I think.

Easy Bacon and Cheese Quiche

This is a great starter recipe. I make it with the parmesan and a mix of reduced-fat cheeses (2% cheddar and reduced fat swiss), use a whole wheat crust from the organic store, and substitute 2% evaporated milk for the half-and-half. You cannot tell the difference from using half and half (which I started with). My kids love it too. Next time, I am going to try non-fat evaporated milk. Seriously, there is so much cheese in here, you will never know the difference. And please use real bacon (no nitrates if you are inclined to buy that but not necessary).

Classic Chicken Noodle Soup

This worked out really well with some mods. First, WAAAAY too much onion in the base. Use just one small/medium onion. Too little liquid, and the water is too bland. Started out with the recipe and ended up adding concentrated chicken broth AND 1+ more quarts of chicken broth. Next time I will just use 4-5 quarts chicken broth, and more carrots to round that out. Substituted whole grain rotelle. Holds up and is better for you. Did not put the chicken skin the broth. Yuck. Next time I may add white beans too. My kids liked it--the ultimate tasters!

Brownies In A Jar

Just made this recipe to test it out for holiday gifts. It's easy on the recipient, works great and tastes great. I cut the sugar to 2 cups as some others did, and added 1/2 c. chocolate chips instead of nuts. My kids actually thought less chips would be better so I'll probably go with 1/3 c. next time. And melt the butter/marg before adding...
