Eggplant Bake

I used a few tips from another reviewer and a few of my own tweaks, and you just can't go wrong by doing the following: After slicing your eggplant, definitely salt the slices and let them dry for about an hour. Rinse off, dip in egg and coat with italian season bread crumbs. Spray two rectangular cookie sheets with olive oil spray, and as another reviewer suggested, bake the eggplant for about 14 min on each side. While the eggplant slices bake, saute half a sliced red onion and a couple cloves of chopped garlic. When the eggplant is done, place in a dish, topped with the onions & garlic, then with 2 sliced roma tomatoes. Sprinkle basil and oregano over the tomatos (thanks again to another reviewer!), then top with shredded parmesan cheese and feta. Bake for 20 min. Absolutely delicious every time I've made it!!

Peppered Shrimp Alfredo

This pasta is fantastic!! I used a package of angel hair pasta (it's my fav) and it worked perfectly. I ended up with a slightly healthier version but can't imagine it tasting any better!! I only used about 2 T of butter and 1 T of oil. I used half a red onion and nixed the bell pepper since they're so expensive right now. We used Newman's Own Roasted Garlic alfredo sauce. I took other reviewer's advice and nixed the salt and used fat free half & half for the cream. We topped with parsley and shredded parmesan - it was absolutely restaurant quality. Thanks for a great recipe!

Simple Salmon Chowder II

WOW. This is by far the best soup I have ever made!! I was going to follow other suggestions to add flour because I like my soup thick, but forgot to add it. When the soup was done, it was SO thick and perfect, it didn't even need it!! This soup was so delicious, thank you!!

Shrimp Lemon Pepper Linguini

Very easy and delicious recipe!! I took another reviewer's suggestion and increased the sauce ingredients by half. I also omitted the salt and added a chicken bouillion cube. I highly recommend using fresh basil if you can, and absolutely top with shredded parmesan. Also, I used whole wheat linguine and my husband and I couldn't even tell the difference - it was just light and wonderful!

Crustless Spinach Quiche

This recipe is fantastic. I did a few things differently and I just love the flavor. I used olive oil in place of vegetable oil, 1/2 a chopped red onion, only 4 eggs, 1/2 a red bell pepper and 1/2 a yellow bell pepper chopped, and 2 cups mixture of shredded sharp cheddar and shredded taco cheese. I also did a few shakes of onion powder and garlic powder. This recipe is SO easy and has great flavor, and is so colorful when using the bell peppers! Definitely one of my new favorite breakfast dishes.

Patti's Mussels a la Mariniere

OH MY. This is one of the best things I have ever made. I love trying out new ideas for dinner, and normally (maybe because I'm in the Midwest!) I don't do too many recipes with seafood. My husband and I love mussels however, and noticed they were on sale in our local deli today. ($3.69 for 2.5lbs!) This dish sounded like what I was looking for, because we love the buttery/wine type sauce in these types of dishes. I'm always worried I'm not adding enough flavor to my dishes, but this turned out absolutely delicious and full of flavor. I modified the following: 1 1/2 cups chardonnay, 3-4 T butter, half a sliced white onion instead of green onions, nixed the tomatoes, added a chicken bullion cube, forgot the salt and pepper (which was fine, maybe because of the bullion). It was SO flavorful. I had some homemade baguette-type bread and sliced up 4 small pieces each, which I placed around the edges of our plates - it was amazing to sop up the sauce with the bread. I wasn't sure how high the burner was supposed to be while cooking the mussels, so I left it about medium heat and 10 minutes was perfect. This is a definite keeper and I can't WAIT to make it for guests.

Mediterranean Pasta

Oh my gosh DELICIOUS!!! I basically used the same ingredients, with the addition of onions and garlic, but prepared a little differently. I baked the chicken, and in the meantime sauteed the onions and garlic. After chicken was baked, I cut up and added to the onions/garlic until everything was nice and browned, then added a cut up roma tomato. I added about a tablespoon of olive oil to the already cooked linguine, added the chicken and other cooked ingredients, then tossed in marinated artichokes and black olives. I then topped with the feta cheese. I used only 8 oz linguine and 2 chicken breasts, and this actually made 4 platefuls. Absolutely delicious and healthy!!!!

Tomato Chicken Parmesan

Delicious recipe, with a few tweaks to it! I only dipped the chicken in an egg and bread crumb mixture, saving the cheese for later. I put a thin layer of sauce on the bottom of the dish as the recipe says, then added the chicken, THEN I smothered each piece with shredded mozzarella, a healthy layer of sauce, and another layer of shredded parmesan on top. I have been told this recipe tastes better than restaurant chicken parmesan!!

Pumpkin Wheat Honey Muffins

These are the BEST muffins I have ever made. I'd been looking for a good whole wheat flour recipe to make a healthier muffin, and this recipe is wonderful. I used about 1/4-1/2 t each of cinnamon, nutmeg and ginger instead of pumpkin pie spice. I used more pumpkin puree, about 8 oz. I followed another reviewer's suggestion and replace half the oil with applesauce. A couple days later, the muffins are still so moist and delicious!!

Delicious Black Bean Burritos

My husband and I LOVED these. I had no garlic so I used quite a bit of garlic powder, had no jalapenos, and upped the cream cheese a bit. I also added 1 can of corn and a generous helping of chili powder. The end result was so gooey and delicious!! We topped the mixture with sour cream and shredded taco cheese before rolling up. One of the easiest things to throw together, and made about 3 LARGE burritos, using the large spinach/herb tortillas. This recipe has made it to my list for dinner rotation!

Vegan Chocolate Cake

This is a great chocolatey cake "loaf"! I baked as instructions said, in a 9x5 loaf pan, which makes for perfect snacks by the slice. I substituted the oil with 1/4 cup of ground flaxseed and 1 T butter, and this turned out just as I had hoped. It's perfectly chocolatey but not overly sweet, with a nice cakey but not too crumbly consistency. Mine was done in about 30 minutes.

Catherine's Spicy Chicken Soup

Delicious! I eliminated the can of whole tomatoes and the can of tomato soup. I forgot the olive oil - and it came out amazing!! It really does make a LOT of soup. Great spicy flavor.

Homemade Black Bean Veggie Burgers

I really enjoyed the flavor of these burgers, but they were a bit mushy. I did remove the moisture from the beans, onions & pepper. I'm wondering, as another reviewer asked, if there is a way to make them less mushy? I'm wondering if I shouldn't have chopped/pureed the veggies so finely. I'd love to make these again.

Gloomy Day Smoothie

This smoothie is so delicious and refreshing!! I followed the recipe and added a tray of ice cubes, it was absolutely perfect. There was enough for me to sip on it for several hours. This is a wonderful smoothie to have for breakfast, thanks!!
