Lentil and Smoked Sausage Soup

I have made this a couple of times with a few minor changes and have really enjoyed it. I leave out the onion because I don't like them. Also, I use turkey smoke sausage and extra cabbage, along with 2 extra cups of chicken broth. Last night I used Rotel instead of plain diced tomatoes to give it a little more spice. It was really good!

Angela's Awesome Enchiladas

This recipe was awesome! It's definitely replacing my old chicken enchilada recipe! I really didn't change it up any. I took another reviewer suggestion and cooked my chicken in the slow cooker with the spices & chiles. It was easy to break up and then add the sour cream & soup. I did replace the onions with onion powder out of personal preference. For the enchilada sauce, I used our favorite: Mrs. Espy's Enchilada sauce, found here on AllRecipes. Thanks for a great recipe!!

Italian Bread Using a Bread Machine

Sweet and Spicy Sweet Potatoes

I made these last week with a couple of small changes: I left out the poultry seasoning because I didn't have any and also the brown sugar because I think the potatoes have enough sugar in them. I added some kosher salt as well. They were great! I'll definitely make these again and again. Thanks!

Mexican Rice III

I made this for the first time last night and my husband & I both loved it!! I did leave out the bell peppers b/c I don't like them. Also, on the recommendation of other reviewers, I added the juice of half a lime just before covering the rice, and I waited until the rice was done to stir in the cilantro. Thank you for this fantastic recipe that we will use over and over!

Party Mimosa

I made these last night for a girls' night in I had with two of my friends. I made them exactly as the recipe says except had to use 6 oz. mango nectar & 6 oz. apricot nectar since I didn't have the combo. They were a huge hit, and we will definitely make them again. I will also try this with ginger ale instead of champagne for punch at showers in the future. Thanks for an awesome recipe!

This is one of our favorite recipes. We started making them after they were on Emeril's Tailgating Contest on the Food Network and have been making them regularly since. They're a lot of trouble, but very worth it!

Spicy Rapid Roast Chicken

I needed a fairly quick way to prepare a whole chicken this evening and so I tried this recipe. I was using a 5 lb. chicken, so I doubled the spices. Also, I was out of cayenne and so I substituted white pepper for that. I rubbed the spices on top of and under the skin, then placed on a rack in a baking pan. Since I was using a bigger chicken, I left it at 450 for 30 minutes instead of 20. It was great!

Spicy Slow Cooker Black Bean Soup

I made this yesterday and thought it was delicious. I soaked my beans overnight, used the recommended ingredients except for using pickled jalapeno slices (about 1/4 cup) because I didn't have fresh and also I used minced garlic instead of garlic powder. I cooked it on low for about 10 hours then used an immersion blender to thicken it up. We served this soup with shredded cheddar and fresh cilantro. It was spicy, but not too much for us. We will definitely make this again!!

Prosciutto Wrapped Asparagus

I made this Saturday and loved it!!! The only thing I did differently was cook it longer. I actually forgot it. I probably left it in the oven 15-20 minutes. However, it was larger asparagus, and I think it needed it anywya. It was still a little crispy when I took it out. The leftovers later were just as good - maybe better - at room temperature. We'll definitely make this again!!

Sour Cream and Onion Bread

I made this last night to go with some homemade beef stew my husband made. It went really great together! It is a very rich bread, so not something I would want all the time, but it was great with the stew. I did make a few changes. I used half bread flour & half whole wheat, as suggested by other reviewers. I also added 4 tsp. of vital wheat gluten to help it rise. I didn't have wheat germ, so that was omitted. We will definitely make this bread again. It would also make great rolls!

Spinach Quiche

This was a great recipe! I only used a tablespoon of butter and sauteed fresh baby portobello mushrooms with the garlic. I left out the onion (I don't like them) and used plain feta because that's what I had. It was delicious!

Chicken Wing Dip

I made this for some friends Saturday, and it was a big hit. I used blue cheese instead of ranch and also used more chicken than called for, however I think next time I will stick to the 2 cups as this was a little thick with the extra. I also made in the crockpot because we'd be snacking all evening. Great recipe!

Grilled Bacon-Wrapped Olives

We had this Saturday when we were tailgating. My friend wrapped up the olives before we went, so they just had to be thrown on the grill when we got there. Before wrapping, she put a little bit of canned cream cheese in each one. YUM!

Home Style Macaroni and Cheese

I made this recipe to take to dinner at the home of some of our friends. The only changes I made was to substitute some of the milk with evaporated milk and also to use only half of the breadcrumb mixture. It was a huge hit and is definitely be something I will make again!

Beer Margaritas

The first time I made this, I used Sprite instead of water, as several other reviewers suggested. We really liked the outcome, however it was a little sweet for our taste. Last night, I made another batch using the water. It was better, but still a little sweet, so we added a 2nd bottle of beer. (We used Miller Chill.) Delicious!!!! It was perfect for our tastes, and this is how we'll make it from now on: Per the recipe + a 2nd bottle of beer. :)

Jalapeno Popper Spread

I made this Friday night for a group of friends, and it was a big hit. After reading reviews, I added some breadcrumbs to the top before baking in the oven. I served it with New York Style Sea Salt Bagel Crisps. I used two cans of green chiles and no jalapenos b/c of some of the people that would be there, but next time I'll definitely add the jalapenos to make it more spicy!

My friends and I love these. I don't like Guinness alone, but this way it tastes like chocolate milk. You have to drink it all at once, though. And careful...they sneak up on you!

Maria's Stuffed Chicken Breasts

I made this last night and got several compliments from my husband. I didn't change much from the original recipe other than leaving out the eggs and adding Italian seasoning & fresh ground pepper to the filling. It was delicious and something we'll definitely have again!

Pecan-Oatmeal Pancakes

I've made these pancakes twice now and love them. I did add some vanilla the second time (as someone suggested) since they were a tad bland w/o it. I keep these in baggies in the freezer and throw a couple in the toaster to eat on the way to work. Very filling!
