Kale and Banana Smoothie

I was surprised that we didn't taste the kale! I used unsweetened almond milk and honey instead of molasses. I also didn't use the flax seed-one step at a time trying these:) Kale and banana is a very good mix! Next I'll try kale and blueberries. I gave 4 stars because I changed the recipe but guessing I wouldn't care for the soymilk as much.

Nana Dot's Irish Soda Bread

Very good! I don't care for caraway seeds so I omitted them. I also stirred the vinegar into the milk and let it sit to make a buttermilk (before pouring it in the mix). I've never had Soda bread before but it had the texture just like a scone. It is sweet like a scone too, so if you want more savory, reduce the sugar.

Pumpkin Wheat Honey Muffins

I made this recipe as written except I used a mix of spices in place of the pumpkin pie spice. The texture, color and flavor were great. Not too sweet, dry or crumbly. I did mix in some fresh cranberries for a little bit of tart. Really good, my young kids love them!

Zippy Shepherd's Pie

This was really good. I have never used curry much and certainly not in this kind of dish. I used about 3/4 teas. and that was plenty for my taste. My husband and 3 young kids really liked it also. I will make it again. I did substitute a pint of home canned tomatoes instead of the coarsely chopped ones.

Best Toffee Ever - Super Easy

I have made a similar recipe many times. It definitely needs to cook to 300 degrees. I have even found it's better to go just a shade higher (302). I still have trouble getting it to turn out right sometimes. If it hasn't turned an amber color it's not going to turn out right. An excellent combo for toffee! Pouring it onto buttered parchment paper makes it easier to deal with. I put chocolate and crushed almond slices on both sides of the toffee.

Jammin' Beef Stew

I made this for my husband and 3 young kids who aren't thrilled about beef stew. They liked this the best of any I've tried. I did add celery as others suggested and used a pint of home canned tomatoes. I would not recommend putting in the potatoes until the last 3-4 hours, or they would be mush. I cooked it on low for 8 hours and everything was very tender. I added a bit more salt and pepper and only 1/3 cup jam. Really good recipe-will make again.

Frog Eye Salad

It seems weird to have pasta with fruit/sugar but it's good. I've made it before as the recipe states, but this time I left out the coconut and also used instant vanilla pudding (5.1 oz box)mixed with the juice from the pineapple and oranges, instead of the first 7 ingredients. It tastes just as good if not better and is a lot quicker! I only used one large can of crushed pineapple and 2 (11oz) cans of oranges and it was enough. My young kids love this salad-hubby too.

Honey Whole Wheat Bread

I added an extra 1/2 teaspoon of yeast and it had great texture, but it needs more salt(maybe 1/4 ts. extra),it was somewhat flavorless. I will bake it again with more salt and maybe some ground flax seed.

Hearty Meatball Soup

The meatballs were good but too many for the soup. It was too strong on the tomato and also too much cabbage. The flavors together were a little strange. Maybe with less tomato juice, no cabbage, replace rice with noodles etc. Others may like the flavor but it was just odd for my family and I. I won't make this again.

Kalua Pig in a Slow Cooker

This was an amazing flavor for being so simple! Watch the porportions. Multiply the salt and liquid smoke for how many pounds your roast is. I had a 4 lb roast and butterflied it open. Afer the fork holes, I coated the whole area with salt and then rubbed and did the same with the liquid smoke. It was approximately quadrupled from the recipe for a 1 lb. roast and did not taste to salty. I wonder if this would work for beef too-I'm a Nebraskan!:) I've had Kalua pig in Kona, HI and this does taste just like I remember! Yum! I would recommend putting the slow cooker in the garage-it tends to give off a burnt smell because of the liquid smoke.

Jay's Signature Pizza Crust

It had a really good texture. I used 1 cup of whole wheat flour and it still turned out well. I topped it with BBQ sauce, chicken, peppers, spinach and cheese. My family really liked it.

No Bake Cheesecake II

I made the filling times 1.5 and it was perfect for a 9x13 pan. I also added 1.5 tablespoons of lemon juice to the mixture and topped it with cherries. It was great. My husband took it to a men's wild game feed and there was none left!

Best Ever Muffins
