Fantastic recipe! Subbed a bunch of spices for the onion, easier. Used seasoned flour, garlic powder, onion powder, dried mustard, pepper, seasoned salt, cayenne. Topped with a fried egg. Great for an easy brunch!

100% Whole Wheat Pancakes

Probably should've used brown sugar instead of white, the flavor didn't come through. Made soured almond milk with apple cider vinegar and that worked just fine but didn't add a pronounced buttermilk flavor. Subbed some rice flour for WW and it made the pancakes super fluffy - I highly recommend it!

Slow-Cooker Corned Beef and Cabbage

This recipe has good flavor, but the recipe calls for too much water, turning the vegetables into total mush. Considering the cost of the corned beef, this recipe didn't pull through, and I won't be making it again. The positive takeaway is the peppery veg-beef broth I froze to make a veg barley soup in the dead of winter.

Rosemary and Garlic Simmered Pork Chops

Wow! I'm not a huge pork fan, but these are fantastic and I will definitely save this recipe. I used a whole 2 c can of broth and made gravy served over mashed cauliflower. Rosemary garlic gravy? So good!!

Low-Carb Mashed Cauliflower

Added a tbsp of butter, and used garlic salt instead of minced. Delicious! My potato loving boyfriend didn't notice the substitution until his plate was cleared. Also, using the immersion blender is a treat, much better than mashing potatoes by hand!

Kohlrabi and Squash Skillet

Doubled the recipe and it was a one-pan meal for myself and my squash-hating boyfriend who went back for seconds! Then again, how can you go wrong with bacon, onion, and garlic? Awesome way to use my CSA kohlrabi - thanks for the recipe!

Spicy Vegan Potato Curry

This is a staple for me; I usually add cumin seed, carrots, and fresh green beans. PRO TIP: add the curry powder and cumin seed when you're cooking the onion to open the flavors of these spices, then add the garlic with the remaining spices.

Whole Wheat Drop Biscuits

So easy and delicious. In the batch I just made, I used 1c whole wheat flour and 1c garbanzo-fava flour (gluten-free), adding some ground flax seed to 'bind' the gluten-free flour. Also, I used 2 tbsp coconut oil and 2 tbsp vegetable oil instead of all canola oil, and vanilla almondmilk instead of soy milk, to produce a sweeter biscuit without added honey or agave nectar as I normally would. The lighter-density gluten-free flour produced a fluffier, less rock-like biscuit, and the added sweeter ingredients were a perfect touch to mask the bean flour taste. This fluffy, sweet batch was perfect with homemade peach-blackberry jam. My co-workers agree, even the ones who are not very health-conscious thought it was great. Thank you for a fantastic recipe!

Chicken, Rice, and Green Bean Casserole

I thought it was just okay. I added a package of onion soup mix, used fresh green beans, and had to add adobo upon serving. Boyfriend enjoyed it with hot sauce.

Pakistani Spicy Chickpeas

Delicious! I'd give it five stars but I altered the recipe a fair bit. Used 2x to 3x the amount of spices called for, added a lot of cayenne and cumin, and included half a jalapeno, minced. Cooked this all down in the oil with the onion. Then substituted the tomatoes with a can of no-salt diced tomatoes with juice, cooked the chickpeas down in the 'sauce' for about 20 minutes, and finally tossed in a half-bag of spinach for a bit more substance. It's great to get my carnivore boyfriend to enjoy vegan food! :)

Peanut Butter Banana Protein Bars

Every two weeks I make this recipe as is but add 3x the flax seed. It's never been crumbly while mixing or after baking, it's between chewy and crisp. Always very filling and satisfying. Thanks for a great recipe!

Tater Tot Casserole II

Very hearty, filling comfort food. I used low-fat sour cream and added a bag of frozen mixed veggies and it turned out good. Next time I'll use half the sour cream, or just cut sour cream altogether and use two cans of soup and a splash of milk. I'll also mix in half the fried onions with the soup and veg.

Mary Anne's Moist and Nutty Carrot Loaf

I couldn't be happier with this recipe (with my substitutions - substituting agave nectar for sugar, adding flax seed, substituting applesauce for half the oil). It is truly a SUCCESS STORY. Left a loaf in the break room at my new job - coworkers raved about it! Met my boyfriend's family for the first time over Thanksgiving, brought 2 loaves with me - his family LOVES me now, and ALL the women (including his mother and grandmother) asked me for the recipe. They were shocked when I confessed that I'm not a baker, and when I told them the loaf was healthy! THANK YOU MARY ANNE! :D

Healthier Banana Banana Bread

I was disappointed by this recipe because it lacks flavor. It was moist, yes, and it didn't taste BAD, but it was very mild and bland, even with additional banana, added cinnamon and nutmeg, and substituting applesauce for yogurt. I guess I should've also added vanilla. I will NOT use this recipe again. Maybe I'm just used to the deliciousness that is "Mary Ann's Moist and Nutty Carrot Loaf", as I've made that every week recently.
