Easy Mint Chocolate Chip Ice Cream

We used 2 C whole milk, 1 C heavy cream, 1 C coconut milk. Doubled the mint and subbed the chips for leftover M&M's. Fab! Going to make for St. Pats next month too, I am thinking Oreo's next time. Great base and I will be tweaking the add ins to whatever I have laying around.

Cinnamon Bread I

A keeper! For buttermilk I used 1 T vinegar then fill to 1 C line w/ whole milk and let sit 10 minutes. Mix dry ingrediants. Add eggs, vanilla, and melted butter (instead of oil) to the milk and mix. Slowly add wet to dry until just mixed through...no more! Then I added half batter to greased pan, cover with 2 T Turbinado Sugar and 1 tsp cinnamon. Added rest of batter, and topped again with 2 T Turbinado Sugar and 1 tsp cinnamon, swirl with knife and bake. Very good! I also use Vietnamese Cinnamon...try it for baking and you will never go back! Oh and I use half whole wheat and half white flour for personal preference especially with bread.

Donut Muffins

My kids love this and always ask for these when they have sleepovers. I usually just add some cinnamon or pumpkin spice and do not do the butter and sugar over-top.

Blueberry Breakfast Sauce

I make this all the time. Every Saturday for pancakes! I use 1/2 the sugar and once I bring to a boil I simmer on lowest setting for 10 minutes to cook the berries until they burst because that is just how I like it. I have also made this with strawberries, rasberries, blackberries and a combo of everything...whatever is on hand. Fresh or frozen.

Rosemary Ranch Chicken Kabobs

Outstanding. We have made this so many times. I usually just use on chicken breasts due to time. And use only 1 tsp. salt. Everytime I make this for company they won't leave until they hav ethe recipe. YUMMMMY!

Black Bean Hummus

My kids LOVE this! No more junky msg and perservative filled bean dip for us! Thank you so much! I put this out before dinner one night on a taco night and they devoured it. They dipped with blue corn chips. The only thing I changed was 1/8 tsp cayenne to test, but next time will use the full 1/4 tsp amount. This will def be my next potluck bring.

Holiday Chicken Salad

Very good recipe! I made twice this weekend :) I added 1 T sugar, 1/2 T lemon juice, 1/2 T vinegar and used almonds instead of pecans because that is what I had. I love the tang with the sweet and salty fruit and nuts. I also added 1 box of cooked whole wheat elbows and extra mayo the second time for a pasta salad....so good!

Airport Bob's Green Beans

The best! I usually skip the bacon and it is still so good. A major hit when I bring for holidays even the little kids gobble them up forgetting that it's green. I always use fresh green beans but that is preference.

To Die For Blueberry Muffins

Very good! When I am in a hurry I don't do the topping...and usually sub 1/2 c. flour for whole wheat, I also sub 1/4 c. of the sugar with brown sugar too but that is all personal preference. Great recipe, I have also added dried cranberries and pecans, and unsweetened coconut flakes and pecans. I also usually use organic butter instead of oil.

Banana Muffins II

Due to what I had on hand, I used 1/2 C sugar 1/4 C brown sugar, 1 C flour, 1/2 C whole wheat flour and for personal taste added a dash of nutmeg. Before baking I sprinkled with pecans and then brown sugar so it would carmalized them while baking....delish! Very good recipe and simple. We all loved them.

Fluffy Pancakes

Very good, always what the kids ask for every Saturday morning and I am able to use all natural ingrediants and usually even sneak in half whole wheat flour and no one has ever noticed, they still stay fluffy and delish! I even baught a griddle just so I can pump more out at a time. No chemical induced boxed pancakes in this house anymore!

Cheesy Beans and Rice

Great recipe. 1st time I made as is and was wonderful, 2nd time I tweaked to our taste. Used Muir Glens fire roasted tomatoes (our fave), garlic, 2 tsp cumin, 1 tsp chili, 1/4 tsp oregano, 1/4 tsp cayenne and 1/4 tsp salt....couple grinds of fresh pepper. My corn lovers topped with fresh corn, I did not...but did top all of ours with greek yogurt (or sour cream), green onion and cilantro. Next time I will add leftover shredded chicken too or mix all up and stuff it into bell peppers and bake same amount.

Cinnamon Coffee Cake II

As Is...Amazing! You don't taste butterscotch everyone. It is added to create the caramel-ey taste of coffee cake and add richness. Very good recipe. Wanted to test it before bringing to a baby shower for a best friend and have to say it will be a 'for sure recipe asking' winner!

Baked Ziti I

Very good! I made without hamburger and served with "My Mom's Parm Chicken" from here. Followed recipe and this is a great ziti recipe I have been searching for...will become a regular in my house now. I think I will try adding spinach like some reviews did, and I did add garlic but that is personal preference. Very good quality recipe.

Good Old Fashioned Pancakes

As Is. Perfect! Follow recipe. Great rise, fluff, taste...I put in a splash vanilla and 1/2 C. blueberries. But don't change any of the recipe measurements. Great plain, I made the first few plain to taste the recipe and then added the other because the kids love blueberry pancakes. I will have this at the top of my breakfast list :)

Baked French Fries I

Really good fries without the high fat and calories! If I would have left them in for 45 at 450 degrees they would have been black! I suggest 400 for 40 minutes...glad I was watching them. I will make up a bunch of these and foil them on the grill next time we have a BBQ.
