Easy Mint Chocolate Chip Ice Cream
We used 2 C whole milk, 1 C heavy cream, 1 C coconut milk. Doubled the mint and subbed the chips for leftover M&M's. Fab! Going to make for St. Pats next month too, I am thinking Oreo's next time. Great base and I will be tweaking the add ins to whatever I have laying around.

Cinnamon Bread I
A keeper! For buttermilk I used 1 T vinegar then fill to 1 C line w/ whole milk and let sit 10 minutes. Mix dry ingrediants. Add eggs, vanilla, and melted butter (instead of oil) to the milk and mix. Slowly add wet to dry until just mixed more! Then I added half batter to greased pan, cover with 2 T Turbinado Sugar and 1 tsp cinnamon. Added rest of batter, and topped again with 2 T Turbinado Sugar and 1 tsp cinnamon, swirl with knife and bake. Very good! I also use Vietnamese Cinnamon...try it for baking and you will never go back! Oh and I use half whole wheat and half white flour for personal preference especially with bread.
