I left the skins on the potatoes because my husband loves them and it turned out great, I allowed the roux to go a little bit longer because he likes his potato soup nice and thick, and it still merged into the chicken stock beautifully! Unfortunately i halved this recipe since I was making it for just my husband and I, big mistake, He ate it all...nearly a quart! and I found myself licking the bottom of his empty bowl when I got back into the kitchen...oh wow, did i just admit to that?
