Cranberry Martini

I followed the recipe except for one minor variation - I used cran-raspberry juice. I served them at a Christmas party and everyone loved them. They were perfect.

After-Thanksgiving Turkey Soup

This was fabulous! I had two minor variations - I added a pint of tomato stock I had after canning all those tomatos this past summer and I used 1% milk instead of half-n-half. Excellent soup, the family loved it.

Butternut Squash Bisque

I've been making this for many years as the first course of Thanksgiving dinner. I make it the day before and reheat on Thanksgiving Day, adding fat free half-n-half to give it a creamier consistency. This has always been a big hit and is something the family looks forward to every year.

Stuffed Hot Peppers

These were a big hit at a recent party. I thought the stuffing might run out the end while cooking but it didn't - it actually cooked up quite firm.

Chicken and Bacon Shish Kabobs

Maybe I didn't marinade long enough (about 5 hours), but I didn't think it had much flavor. I would recommend slightly pre-cooking the bacon as I had a hard time with flare ups. One person recommended garlic (which I did not do), but definitely add some more flavor to this. The concept is great - the bacon, mushrooms, chicken and pineapple - but it definitely needs to be kicked up a few notches...

Campfire Potatoes

I didn't really care for this. There was too much Worchestire for my taste. Perhaps cutting it back would help. Also, the cheese was mixed with the worchestire and parsley and sprinkled on top as directed, but even after over 30 minutes, it didn't seem to melt the way you would expect it too. Maybe I did something wrong in the prep, but it just wasn't for me.

Apple Walnut Salad with Cranberry Vinaigrette

Fabulous salad served for Thanksgiving dinner. The dressing was fantastic - I made a double batch so that I could have the leftovers! The only thing I changed is that rather than puree the cranberries, I actually simmer them for 10 minutes in the vinegar with the sugar and mustard, strained it and let it cool. I then hand-mixed it with a wisk rather than blend it. Past experience with blending dressings left them too frothy for my liking. Excellent recipe!

Basic Yankee Bread Stuffing

I used this recipe for Thanksgiving with a couple modifications - instead of two loaves of white bread, I used one loaf and a bag of cornbread stuffing mix. I also used a sage flavored pork sausage. It came out great! I will be using this one again next year.
