Low-Fat Macaroni and Cheese

Reviewed: Feb. 19, 2012
I made this last night and was pleasently surprised given that many reviewers didn't care for it. My husband said he like it... without me asking if he did so that is a good sign! I added a whole shredded onion and added the wheat germ/parmasean cheese topping. It did need additional salt and pepper.

Zesty Slow Cooker Chicken Barbecue

Reviewed: Mar. 30, 2011
I've been making this recipe for a few years now. It's a favorite in my family and my go to dinner when we have guests coming over. It's so easy and everyone loves it. I def. recommend shredding the chicken about 2 hours before it's done.

Crazy Crust Pizza Dough

Reviewed: Nov. 23, 2008
I really liked this and was super easy. My crust actually came out pretty thick. I aded a bunch of italian seasonings and used the 1 egg and baking poweder. the pizza is more of a bisquet consistency than dough, but nonetheless, will still make again

Lemon Rosemary Salmon

Reviewed: May 21, 2008
it was ok- kinda bland. I didn't think this was all that special. I didn't have fresh rosemary and used dried, not sure if that was why. Prob wouldn't make again

Spinach-Stuffed Flounder with Mushrooms and Feta

Reviewed: Mar. 8, 2008
This was so simple and really tasty! I made so many modifications but it was still good. I used frozen package spinach and mozzarella cheese since I didn't have feta or mushrooms. I also seasoned with lemon pepper, lemon juice, and garlic powder. I can't wait to try the orig. version of the recipe, but this one works well too! Served w/ white & veggie blend.

Olive Chicken II

Reviewed: Mar. 2, 2008
Not sure what went wrong here but this recipe just didn't do it for me or my husband. I followed some of the same substitutions as others but we just didn't care for it. It smelled great while cooking but ended up being really bland. I think this recipe, or variations of it go best with fish.

Chicken Tarragon

Reviewed: Feb. 24, 2008
This was a simple recipe. My husband liked it but I didn't care for it. This was the first time I had cooked with tarragon and I do not care for the scent of it at all.

Egg-Free Low-Fat Oatmeal Cookies

Reviewed: Feb. 24, 2008
These were so simple and what you would expect for a fat free cookie. If you are used to the consistency of butter/egg less cookies, these are pretty good.

Almond-Crusted Tilapia

Reviewed: Feb. 23, 2008
We loved this recipe! I've made a chicken version of this and I always run out of the almond mixture. For three filets of tilapia, I left all the measurements this same and I didn't run out. I also used egg whites and omitted the butter and used some olive oil instead. I also used garlic powder since I didnt have garlic pepper. I didn't have fresh parma cheese so used the grated topping for spaghetti and it was fine, since it's all I had. It was excellent on will become a regular dish for dinner.

Cheesy Eggplant Casserole

Reviewed: Feb. 3, 2008
I don't think i will be trying this again. I didn't add onions (not a fan) but added tomatoes and it was still pretty dry. I also doubled the italian seasoning but just didn't have much of a taste. Oh well.

Amazing Chicken

Reviewed: Jan. 27, 2008
This was good, I certainly wouldn't call it amazing chicken. Somthing seemed to be missing. I will try it again though, it was simple enough. Next time i will season the chicken a bit before putting on the mayo.

Italian Zucchini Boats

Reviewed: Jan. 27, 2008
I thought this was great! I can't wait to make this in the summer with fresh zukes and tomatos from the garden. I omitted the butter, found it to be unnecessary.

Eggplant Burgers

Reviewed: Jan. 22, 2008
Very good. I took the advice of one reviewer and didn't microwave but breaded and fryed in the frying pan. Also to save on cals, omit the bum and use romaine lettuce to hold it all together.

Chicken and Artichoke Pizza with Fresh Tomatoes

Reviewed: Dec. 22, 2007
I enjoyed this pizza. I had already grilled chicken cutlets, so I cut them up and cooked them in the artichoke reserve liquid. I used whole wheat dough and put some tomato sauce down first, then the chicken/artichoke mixture, along with cut up grape tomatoes and black olives. It was good, my husband enjoyed it and will def. make agagin.
