Peanut Butter Sheet Cake

PB sheet cake makes it to nearly every family function on my hubby's side. I am pregnant with a craving and there's no family event in sight. So, I made my first ever pb sheet cake. The frosting is amazing. It makes the cake. Upon first bite, I was slightly disappointed as the cake does seem a bit bland (though o-so-moist!). My tastebuds caught up and the frosting took over. I think if the cake were any sweeter or any more peanut buttery, I'd be in a peanut butter coma. Both textures of cake and frosting are perfect. I did use all butter instead of butter and oil, and I doubled the icing. Everything else was the same. Great stuff! ETA: It's even better the next day!

Super Sausage Gravy

Gone are the days of browning the meat, making the white sauce, and then combining! Hooray for one pan meals! I don't know why I never thought to do it this way, it just makes so much sense, and is soooo good. I did double the milk and flour because a lb of meat is a ton for just the little bit this recipe makes.

Banana Pancakes I

These are really good. Low and slow is the key for these. Don't rush cooking them. I followed entire recipe and they turned out delicious (did make sure to sift dry ingredients). Almost like a treat. I like to put whipped cream on mine, with a sprinkle of nutmeg and a smidge of syrup on top. Of course, I ate 2 standing at the stove before I got to the topping point. Yummy!

Classic Cinnamon Rolls

Oh my goodness! I can bake, but don't always have the best luck with breads. These came out perfectly! The whole family loved them. The bread is so moist and fluffy. I did add some orange zest to the dough batter, as that's a personal preference for recipes like this. Also, for the filling, I multiplied it by 1.5 and melted the butter and stirred in 1 1/4 cup sugar and 1/4 cup brown sugar, and 1 tb cinnamon. For the icing, I had leftover cream cheese icing from Christmas, though not enough. So I made this icing, again adding zest and a squeeze of orange and I used heavy cream as I had a little of that left in the fridge to use up. I combined the two icings and it was the best icing I've ever had. To note: I didn't have any trouble with this in my kitchenaid. I did end up with 9 cups flour in it, leaving it just a smidge sticky to rise, as I knew I'd be working in more flour in the next step. Do not overwork the dough. This one's a keeper. I'll be making it every Christmas.

Lemon Coconut Loaf

Delicious. I did omit coconut because my DH is a texture freak and loves lemon, so I wanted him to be able to enjoy the loaf too. I used 2 tablespoons fresh lemon juice in the bread and it still wasn't lemony enough so I dropped in a little lemon extract too. Everything else remained the same, but if I crammed all that batter into one 8x4x2 pan, it would have been a huge mess. So this easily makes 2 smaller loaves, and mine were done at 41 minutes. DO NOT set the timer on your oven for the recipes stated time and forget about it. You will have dry loaves. Be sure to keep a watchful eye on your cooking time.

Chantal's New York Cheesecake

It wasn't until I shut the oven off that I realized I'd forgotten the flour. I freaked out a bit, but took solace in another review that said they had forgotten it too and it still turned out great. I have never put flour in a cheesecake! That being said, I've made better, I've made worse. This is middle of the road for me.

Eileen's Meatloaf

Straight from the mouth of my 8 year old "Oh my gosh it's good." That gave me the warm fuzzies because I know I wouldn't go within 10 feet of a loaf of meat when I was a kid. It's still not my favorite, but I'm going to side with my daughter... It is really good. Easy to make. Perfect as written. I might have to fight my daughter for leftovers ;)

Golden Brown Ravioli with Sauce

Good recipe, but do not use anything but Panko bread crumbs. Season these as needed. Once you try Panko bread crumbs, you'll never go back to the standard, nasty, manufactured crumbs.

Easy Cream Cheese Danish

This is good stuff. I do admit to not having any sour cream. None. Not even a little bit i could scrape out of the container. So i did without and added just a tiny bit of milk. Halved the filling portion. Added some almond extract with the vanilla because its my favorite. Brushed the top with egg white and sprinkled with sugar. I did have to add a little bit more milk to the icing portion to get it to drizzling consistancy. Again added almond. Even my dh who doesnt have much of a sweet tooth loved these.

OREO Mini PHILLY Cheesecakes

These are pretty good. I wouldn't soak the cookie or crush them and mix the crumbs with butter. That takes away the ease of this recipe. I was done with this in no time. Drop the cookie, fill the cups. And to me the cookies aren't too hard. They're not super soft, but they're not hard like they were just taken out of the package, either. I didn't mess with melting chocolate or cool whip. I just crushed some oreos on the batter. I'm docking this because the cheesecake part, which is pretty much the most important part, is pretty much flavorless. It needs something. Vanilla? I'll keep the oreo bottom idea, but find a different cheesecake recipe to fill it with.

Salsa Chicken Rice Casserole

Followed the recipe as written, but for the layering. Didn't have time to screw with layers, so I mixed it all up. We liked it well enough. Wouldn't hesitate to make it again. Made it extra healthy (LOL) by crushing doritos on top.

Crescent Bacon-Cheddar Pinwheels

I made one roll as stated and the other roll with pepperoni, ranch and cheese since I didn't have enough bacon. Delicious. No leftovers here. Making for turkey day too.

Fudge Puddles

Oh. My. God. These are to die for. I was a little intimidated by the recipe, but it's really nothing more than making some PB cookies and melting some chocolate. It was so easy. These puppies are rich too, don't let their small size fool you. You won't be popping one after another in your mouth because of the sweetness. Can't wait to pass some of these out to the neighbor lady. The recipe made just enough cookies and just enough filling (which I piped out of a plastic baggie). There's really no need to go doubling anything, unless you're doubling the whole recipe.

Coconut Orange Cupcakes

If you're going to change anything, give the oranges a quick chop. That's it. These are perfect and so delicious. We couldn't stay out of them. Not even DH who hates coconut. Gave 5 to the neighbor, the other 19 were gone by the next evening. I'll burn them off all week at the gym.

Stuffed Green Peppers I

As written, ok. A bit bland with condensed soup. I noticed a lot of people using itallian seasoning, so the second time around I skipped the soup and just used spaghetti sauce, stirred in after the rice simmered so I don't have to worry about it being dry in the middle. I also like to use ground turkey. I stir cheese into the mix and put some on top with cooked bacon topping off the cheese. Good stuff

Best Beef Dip Ever

Geez, I don't know. I made this as written, except halved since my roast was only 2 lbs. We liked the sandwiches well enough, but honestly, the au jus tasted exactly like watered down soy sauce. I let the roast go on low for 9 hours, and it turned out perfect. The au jus needs doctoring.

Glazed Corned Beef

This is the only corned beef my dh will request since we first tried it last year. After the first time I made it for St. Pattys day '09, he was hooked and bought several more briskets for cheap that we froze and made on later dates. We did the same this year, and it seems this is now our yearly St. Pats recipe.
